Creations! Flatbread with pear, bacon & bleu cheese

This is one of those recipes that is more of a formula than a recipe.  Change it up to suit your taste or what you have in the fridge.  This version is a combo of all my favorites, freshly baked bread, roasted garlic, caramelized onions, bacon, bleu cheese & fresh pear. I love the sweet, salty, cheese, crusty combo.  Add a glass of your favorite vino and you will be in heaven!

You see, I had this lovely pear

and this head of  garlic ready for roasting…[cut off top, drizzle with Olive oil, wrap in foil and bake at 400 for 1 hour]

some bacon

bleu cheese, a little Parmesan & Mozzerella

and some pizza dough

and some caramelized onions [see Aug 22]

So I patted out the dough into a rectangle and baked it for 10 minutes until just starting to brown.   Then the crust is ready for topping.

Smear the lovely garlic over the top of the crust using your clean fingers or the back of a spoon.  Top with a generous amount of caramelized onions, sprinkle with cheeses and bacon

Then add the pear slices

and bake for 10-15 minutes until brown and melty.

Here’s the recipe:

FLATBREAD WITH PEAR, BACON & BLEU CHEESE

Prep Time 20 minutes
Cook Time 12 minutes

Ingredients
  

  • 1 ripe pear cut into thin slices, no need to peel
  • 1 large vidalia or sweet onion caramelized
  • 1 head garlic
  • OO
  • S&P
  • pizza crust dough [I get mine in deli]
  • Grated Parmesan mozzarella
  • Bleu cheese [Maytag is my fav]
  • 6-8 slices thick cut bacon cooked and cut into small pieces

Instructions
 

  • Stretch dough into a crust. drizzle with OO and sprinkle with kosher salt and pepper.
  • Bake crust 10 minutes until just starting to brown.
  • Remove from oven.
  • Spread garlic [just hold the head and squeeze and the soft garlic will slide out and toss away the papery shell] evenly over the crust.
  • Then add the onions making an even layer.
  • Top with cheeses, crumbled bacon and sliced pear. Finish with another sprinkle of Parmesan. This can hold in the fridge until you are ready to finish baking at 400 for about 10-15 more min. until cheese is melty and looks done.
