Take out Tuesday, Fancy Snacking

HH & I are staying at the beach all week and  I won’t be home for take out Tuesday ,so I am sending some homemade Chex mix with HHjr and his family for nibbles on the drive home.  My kids and their friends love this stuff and if I don’t have a fresh batch ready for beach weekends there is serious complaining.

I am sure you have your own recipe for Chex mix, but have you made it in a while?  Is there a family favorite snack that you haven’t made lately that your family would really appreciate?  Dust off that recipe box!  Surprise your loved ones with a tried and true favorite.  Put some goodies in a little package and leave a “thinking of you” gift  for a friend.  Bring some cookies to a co-worker.  A little saran wrap, a couple of cookies and a ribbon is all you need.  See the Cocktail Cupcakes [Aug 3] and Chocolate Cashew Bars [Aug 9] for some great EASY ideas.

Of course, you need to put this crunchy delight in a cute jar!

Ready for snacking!

Look around and use something crazy to serve your simple snack.  How about popcorn in bucket lined with a napkin…peanuts in a martini glass…potato chips in a beautiful salad bowl.  Don’t be afraid of using things in unusual ways, even the lowly simple snack can be elevated to greatness!  If you set the stage and create the drama, the ho hum becomes a party!

This is potato chips, carrots, grocery store onion dip, cucumber slices, & grapes…everyday boring, but dressed to look like an event!

Fooled by your eyes into something special!

This is a placemat used to line a shallow basket for tortilla chips, fruit, or snacks

An over sized martini glass full of salt water taffy. This really is “Eye Candy!”

This photo is awful, sorry, but I had to include it to show you…these cute little sushi type rolls are PEANUT BUTTER & JELLY SANDWICHES, rolled up and cut into pieces.  Served on a bed of spinach leaves and garnished with whole strawberries.  They went like hot cakes!!

I think you’re getting the idea!  HAVE FUN and see what you can come up with!

CHEX MIX

Course Appetizer, Snack
Cuisine American

Ingredients
  

  • 1/2 box each rice chex and corn chex
  • 1/2 jar dry roasted Planters peanuts [use Planter’s don’t substitute!!]
  • 1/2 box cheez-it crackers [optional]
  • olive oil
  • seasoned salt
  • Worcestershire

Instructions
 

  • Spread rimmed cookie sheet or broiler pan with cereals.
  • Top with peanuts and sprinkle seasoned salt lightly overall.
  • Put about 1/4 cup olive oil in measuring cup and add about 10 really healthy dashes of Worcestershire.
  • Mix well and pour over cereal and nuts. Stir gently until mix is coated. If it seems too dry mix a little more oil and Worcestershire together and add until mixture seems well coated but not too wet.
  • Bake at 275 for 15 minutes, stir well and return to oven for 15 more minutes. I
  • f you are making a really big batch in a deeper pan, increase times to 18-20 min.
  • After baking immediately spread mix on paper towel lined counter until cool.
  • Store in large tupperware container
