Recipe Box, Sweet and Sour Chicken

This is the best sweet and sour chicken I have ever had and it’s EASY! Hungry Husband loved it and you can make it in advance.  That makes it a perfect recipe to me.

You probably have all the ingredients on hand

You dip chicken cubes into cornstarch and then in beaten egg

and into a skillet to brown

when they have browned on one side turn over to brown the other side.  Don’t worry about cooking it through, if will finish cooking in the oven.

When the chicken is golden on both sides transfer the pieces to a baking dish that has been sprayed with cooking oil spray.

Now make the sauce

I am pretty sure you have all these ingredients, Soy sauce, vinegar, sugar, garlic salt and ketchup

Combine the ingredients in a measuring cup and stir briskly until the sauce is smooth.

At this point you can stick it in the fridge until dinner time and finish cooking it then, or you can pop it in the oven.

After 30 minutes in the oven, start serving it up!

I served this with some brown rice, carrots and snow peas, and sprinkled some cashew pieces on top

I also added a prepared frozen spring roll and some sweet n sour dipping sauce on the side.  The chicken was so good, you really don’t need much else!  Drizzle some sauce from the pan over the chicken when you plate it.
