Take out Tuesday, Maple Sausage & Belgian Waffle Bake

For Santa’s Sunday Breakfast I made Maple Sausage & Belgian Waffle Bake, a very delicious twist on the usual breakfast casserole.  It has the same do ahead, overnight ease with some new textures and flavors. This would make a great casserole to gift to friends, you could deliver it cooked, uncooked, or partially baked with cooking instructions.  It is perfect for brunch and holidays.  You will think of excuses to make it!

This is one of the secret ingredients

Vanilla Belgian Waffles by Julian.  Julian’s Belgian Waffles are available at Costco, Whole Foods and other grocery stores,  and online at juliansrecipe.com

and this Butter Pecan Syrup by Michele’s.  This syrup makes anything taste good!  Michele’s syrup is at Publix, WalMart and michelefoods.com

These two things make the dish!

Along with Maple Sausage and Vermont White Cheddar Cheese of course!

Just brown the sausage and drain, cut up the waffles and toss them together in a bowl with 3/4 of the cheddar cheese.

Whisk the eggs with the milk, syrup and seasonings

and pour over the sausage, waffles and cheese

Pour into a prepared casserole dish, or just make it in the dish!

Top with chopped pecans and some more cheese, cover with tin foil and tuck away in your fridge overnight.

Bake uncovered for 45-60 minutes at 325 until the center is set. If the nuts start to get too brown, cover the casserole during remaining baking time, or simply add them during the last 15 minutes of baking.

Let sit for 5-10 minutes before cutting into squares.  This 9″x 9″ casserole dish was the perfect size.

MAPLE SAUSAGE & BELGIAN WAFFLE BAKE

Ingredients
  

  • 1 roll 16 oz maple sausage
  • 6 Julian’s Vanilla Belgian Waffles
  • 7 eggs
  • 1 3/4 cups milk [not skim]
  • 1 cup grated white cheddar divided
  • 1/4 cup Michele’s Butter Pecan Syrup
  • S & P
  • 1/2 cup chopped pecans [optional]

Instructions
 

  • Brown sausage and drain.
  • Cut up waffles into 1 “ pieces.
  • Beat eggs, add milk, syrup and season.
  • Toss sausage, 1/2 cheese and waffle cubes together in a greased casserole and pour milk egg mix over all. Push down waffles to submerge and cover with remaining cheese.
  • Refrigerate overnight then bake at 325 45-60 minutes.
  • Serves 8-10

Notes

Substitute Maple Bacon or Ham instead of the sausage if desired
