Recipe Box, Raspberry White Chocolate Angel Wings

For my Goodie Swap treat last weekend I painted Angel glasses and wanted to put something in them that would be appropriate to angels…I thought about this for A WHILE, hmmmmmmmmmmmmmmmmmmmmmmmmmmmm…..finally I had an inspiration, PALMIERS, they look like angel wings!  So, how to make them sweet was the next step…..raspberry and white chocolate emerged from the idea tank…so I googled and was led to a blog post titled “Why not to make raspberry palmiers”   What! Huh?  I read the post and still wasn’t convinced so I emailed the author, Tish Boyle from Sweet Dreams and noticed she was an editor for a dessert magazine! Whoa, nothing like going straight to the top!  Well, she said never again would she try this, would never work, yada, yada, yada…and of course I immediately decided to do it anyway…

It’s kinda funny because being impatient I let the dough thaw out on the counter, which is a no-no because if you don’t catch it in time it sticks together…which it did…so I just rolled it out anyway…and put a VERY THIN layer of raspberry jam on it, because I was scared, and rolled it up.  They actually turned out okay, BUT…no flavor.  Zero, Zip, Ziltch, just a bread bite…

So I decided to try crescent rolls, and made them like I made the pumpkin walnut spirals

I started by sprinkling my silpat, or use parchment paper,  with sugar { I used Raw for the large granules}

and carefully rolled the dough out on top, sealing the preferations

and spread a thin layer of raspberry pie filling over crescent roll crust

sprinkled the dough with white chocolate chips

and rolled up as tightly as possible

Then I cut the log in 1/2, then cut each 1/2 in 1/2 again until I had 16 even slices

then just place the slices in a prepared dish, spaced close together but with a little room to rise during baking

I topped the rolls with some more white chocolate chips when they came out of the oven.  Now, I could just go with these and call them halos instead of wings, but I was still stuck on that palmier/angel thing…

So I made another batch with crescent roll dough again and rolled them palmier style,

rolling each side to meet in the middle

And now I was happy! I melted some white chocolate and drizzled some over the warm wings and set them in the fridge to cool

Every year I paint something to put my goodie in and this year it was tall beverage glasses. The angel glasses were patiently awaiting their sweet wings

I wrapped the rolls tightly in saran

and tucked them into the glasses

the tall organza bag is a delicate wrap for the angel and her wings

and these angels were ready to go to the party!

These rolls would be great with your Holiday brunch, lunch or dinner!

Here’s the recipe:

RASPBERRY WHITE CHOCOLATE ANGEL WINGS

Prep Time 10 minutes
Cook Time 15 minutes
refrigeration time 20 minutes
Course Appetizer, Brunch, Dessert, Snack
Cuisine American

Ingredients
  

  • 2/3 cup Raspberry Pie Filling
  • 1 roll crescent roll dough
  • 1/2 cup white chocolate chips plus extra for icing
  • Sugar Raw crystals or sparkling sugar

Instructions
 

  • Use a silpat or a piece of parchment paper on a baking sheet and sprinkle with sugar and unroll dough.
  • Seal preferations and press dough lightly into sugar on mat.
  • Spread dough with an even thin layer of pie filling, then toss on some chocolate chips.
  • Roll up dough from each long side, as tightly as possible, meeting in the middle. Place dough roll in freezer for 20 minutes.
  • Cut dough into 16 even slices and place them evenly spaced out on mat or parchment paper, cut side up.
  • Bake for 15 minutes at 375 until golden. Cool and frost or drizzle with melted white chocolate. Makes 16

  1. If at first you don’t succeed…….! You did a great job! Very smart re-do on the palmiers! I wouldn’t have the patience to let dough rise, so I’m sure whatever I made would be a disaster!!! Your creation turned out great, though!!!! I am so impressed that you can knock out that many painted glasses!!! Wonderful job! If I don’t get a chance to say it before the weekend, MERRY CHRISTMAS to you and your family! Have a ball!!!!!!
