Recipe Box, Dieter’s Pasta

Okay, it’s the day after Christmas and you are probably feeling fat and tired after all that holiday food and fun.  Not to worry, here is a go to favorite, that is simple to prepare, satisfying and full of healthy veggies, not calories.  It will start you well on your way to all those New Year’s Resolutions!

Use whatever fresh veggies you have to create a wonderful light pasta in minutes.  I used yellow squash and grape tomatoes, they go really well together when they’re roasted.

I usually use Barilla Plus Multigrain thin spaghetti, but this is what I had on hand.  Actually I prefer Angel Hair pasta for this dish, I like it to be all about the veggies, keeping it very light.  Yes, there’s a few carbs, they will keep you from starving!

Wash the vegetables and cut the squash into half round slices.  Place on a foil lined baking sheet that has been sprayed with Olive oil spray. Drizzle with some more Olive oil, season with salt and pepper and toss the veggies around a little to distribute oil coating and seasonings.

Roast at 400 for 20-30 minutes.

While veggies are roasting cook pasta and drain.  Return to warm sauce pan and toss with Pesto sauce and some Parmesan cheese. Stir well and keep warm

Top with the hot roasted vegetables, a little more Parmesan

and enjoy a light and healthy meal!

Here’s the recipe:

DIETER’S PASTA

Ingredients
  

  • 12-14 grape tomatoes
  • 2 yellow squash
  • 3 oz. Angel Hair pasta
  • 4 T prepared pesto sauce
  • 1/4 cup or more to taste shaved fresh Parmesan

Instructions
 

  • Wash veggies, dry, & cut squash into 1/2 inch slices, and then halve.
  • Place veggies on foil lined pan sprayed with cooking spray. Drizzle veggies with OO and season with S&P.
  • Roast at 400 for 20-30 minutes.
  • Cook pasta until just al dente, about 5 minutes, drain and return to hot sauce pan and toss with pesto, stirring to melt. Add some Parmesan and cover and keep warm.
  • When veggies are done put them on top of pasta and toss gently.
  • Serve with additional Parmesan. Serves 2.

Notes

tip:
roasted tomatoes are so flavorful, so easy and add a burst of wow to any dish. Just throw them on a foil lined pan, drizzle with OO, S&P and roast at 400 for 20-30 minutes

Hungry Husband loves this and he is not a big pasta fan!
