Gifts from the Kitchen, Crescent King Cake

Here is the perfect treat you can whip up for Mardi Gras season! It based on crescent roll dough so it goes together quickly and easily.  A little colored icing and your guests and friends will think you are a professional baker!

All you need is a can of Crescent Rolls, butter, brown sugar, pecans and vanilla.  That’s it! The icing is just a powdered sugar glaze made with Confectioner’s sugar a little milk and almond extract, and food colorings.

I hope you will try this recipe, it is so GOOOOOOOOOOOOOOOD!

Lay the dough out on a silpat or a piece of parchment paper {it gets sticky so this will help} and seal all the perforations so you have one solid rectangular sheet of dough.

Chop enough pecans to make 1/2 cup

Mix 1/4 cup of brown sugar and 1/2 tsp cinnamon into the pecans and set aside.

Mix 1/2 tsp of vanilla extract into 2 T melted butter and brush on crescent roll crust

Sprinkle dough evenly with pecan mixture, leaving about 1/2 inch border all the way around.  Roll up slowly beginning with the long side of the dough, mending perforations as you go. No photo here, my hands were BUSY!  Roll gently but tightly until you have one long log.  Form the log into a circle and pinch edges together to form a ring.

Bake at 375 until brown, mine takes 17 minutes.  Let cool.

Make the glaze by mixing powdered sugar with some milk and food coloring.  I start by putting about 1/8 cup of sugar into 3 small bowls

I use gel food coloring, it mixes well and you can buy or mix some great colors.  It is sometimes available right in your grocery store, if not you can buy it at the local craft stores like Michael’s or Hobby Lobby.  Don’t you just love Hobby Lobby?  You should probably go there anyway and see what’s on sale!

I put several drops of color into a tiny mixing bowl with 1 T of milk and 1/2 tsp almond extract.  Combine this and if the color looks right add it to the bowl of dry sugar.  Stir well and add more sugar until you reach the desired consistency.  I used about 1/4 cup of sugar for each color to get the glaze thick enough to stay in place.  If it gets too thick add milk, too thin add sugar.  Just play around until you get it the way you want it.

Now the fun begins!  When your cake is nice and cool, begin your masterpiece! Create & Decorate!

You can buy fancy colored sugar but I just used the sparkling sugar I had and found some gold sugar at the grocery.  Remember how I told you I love Hobby Lobby? Yeah, well I have given it up for Lent, and “pre-Lent”………..in other words I am trying to stay outta there for a while!

Enjoy this cake for breakfast, dessert or a snack…any time is fine!

Ingredients

  • 1 can 8, crescent rolls
  • 2 Tbsp unsalted butter melted
  • 1/2 cup chopped pecans
  • 1/4 cup light brown sugar packed
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • powdered sugar
  • almond extract {the secret ingredient}
  • milk
  • yellow, green, purple food color gels
  • sparkling sugar or colored sugars

Instructions

  • Unroll crescent rolls and press to seal all perforations.
  • Mix vanilla in with the melted butter. Spread butter and vanilla over crescent rolls.
  • Mix pecans with cinnamon and brown sugar. Top butter with pecan mixture.
  • Starting with the long end, roll up jelly roll style and form into a circle. Pinch edges together. Bake at 375 for 15-20 minutes (until golden brown).
  • After the cake has cooled, mix together powdered sugar and milk and almond extract to make an icing.
  • For each color start with 1/8 cup powdered sugar. Add 1 T milk, 1/2 tsp almond extract to a tiny bowl with a few drops of desired food coloring and stir. Once color is mixed add it to the sugar and stir. Continue to add sugar {up to another 1/8 cup or so} until glaze/icing is the desired consistency. Add more milk if it gets too thick.
  • Top cake with icing and sprinkle with colored sugar.

Notes

this is just as good with plain white sugar icing, drizzle or glaze!
