Recipe Box, Ice Cream Cake Parfait

Our Valentine indulgence was Ice Cream Cake Parfait to celebrate HHjrs Valentine birthday. He loves ice cream cake and I thought a parfait version would be an easy way to serve it. We put his parfait on a plate surrounded by votive candles instead of the traditional candles on the cake. This is an EASY, NO COOK, dessert that would be a winner any time of year. Best of all you can make it in advance and stash it away in the freezer until you need it! 1, 2, 3 ingredients!
Start with a pound cake. You can make your own of course, but to keep it really simple, pick one up from the grocery store.
Choose a flavor of ice cream, I thought this White Chocolate Raspberry Truffle would be a nice choice for Valentine’s Day.
and the third ingredient is Chocolate Sauce!
Let the ice cream sit out for 15-20 minutes or so to soften. Try not to eat any. Okay, try not to eat too much. Okay, try not to eat it all!
and melt some chocolate sauce. Again try not to eat any. My best advice is to make this early in the morning with a big cup of coffee to keep yourself distracted from tasting!
I used some double old fashioned {short fat} glasses. Start building the parfaits by laying one slice of cake in the bottom of the glass.
Add a layer of ice cream
Drizzle with some sauce
and repeat! I know what you’re thinking, “Dessert for Dummies!” Maybe, but your guests won’t care, they will be too busy lapping it up!
When you are finished assembling the parfaits cover them tightly with foil and tuck them away in the freezer.
Let the parfaits sit out for about 30 minutes to soften before serving
Sit back and enjoy the compliments!
You can top it with some whipped cream and a fresh berry or chocolate, but I felt it was decadent enough!

ICE CREAM CAKE PARFAITS
Ingredients
- 1/2 of a 8″x5″ pound cake cut into 1″ slices
- 1 1/2 pints ice cream softened
- 5 oz chocolate sauce {about 1/2 a small jar} melted
Instructions
- Cut cake slices to fit glasses. Begin with a cake slice in the bottom of the glass, top with ice cream and smooth out. Drizzle with chocolate sauce. Repeat layers. Cover parfaits and freeze until serving time. Let parfaits sit out 30 minutes to soften before serving.
- Makes 6 parfaits

You can see there are possibilities for endless creations , you could tailor this type parfait to perfectly suit any occasion!
