Recipe Box, Carrot Dip Garden

This little dish has it all, eye candy, flavor, veggies, easy peasy & a crowd pleaser! You can make this quickly, AND ahead of time, you will be a ROCK STAR once again!
Carrots, fresh spinach, artichokes, chives…a little seasoning, Parmesan and Mayo and you have an appetizer to knock their little cottontails off!
I’m all about carrots and bunnies these days so bear with me if I get carried away.
Carrots are the one vegetable that Super Boy will happily munch!
The bunnies at our house are Sooooooooo proud of their carrots…
Crunchy gold to them!
This is a simple artichoke dip, but this is a cold version, a nice change from the oh so common hot artichoke dip.
It gets a little kick from Ranch Dressing seasoning and fresh chives and Parmesan
I used a smallish rimmed glass cake stand and lined it with fresh spinach leaves
and put the dip in the center
Topped with snipped chives, it is ready to sprout baby carrots!
Radishes would be cute too, but I just thought of that and I don’t have any…

COLD ARTICHOKE DIP or CARROT GARDEN DIP
Ingredients
- 1 can artichoke hearts rinsed, drained and chopped about 10-14 artichoke hearts
- 2 T Ranch Dressing mix
- 1/2 cup light Mayo
- 1/2 cup freshly shaved Parmesan cheese*
- baby carrots
- fresh spinach
Instructions
- Mix together the dip ingredients and serve the dip in a spinach leaf line bowl with baby carrots for dipping. Dip can be made 24 hours in advance. Line bowl and insert carrots up to 6 hours before serving. Refrigerate. Serves 6-8
*try to ALWAYS use freshly grated or shaved Parmesan, it makes a HUGE flavor difference! My grocery {Publix} carries a good ready made store brand but beware of the popular commercial brands such as Kraft and Digornio, no flavor there.
