Recipe Box, Key Lime Parfait

Have you ever heard of a jello cake?

You bake a cake

Poke holes in it and then pour liquid jello over it….hhhmmmmmmm….I’m not a big fan of jello, especially lime green jello~ you remember Aunt Bethany’s jello mold in  Chevy Chase’s movie, Christmas Vacation? Ha, I’ve never felt the same way about jello since!

But, I wanted to create a trifle, or rather a parfait style dessert in a cocktail glass so I decided to give it a go…

I made the cake according to the directions on the box, and poured hot jello over the top.  Being still skeptical about this whole concept, I only used 1/2 the jello mix, I think I was trying not to over commit to the jello!

I layered ingredients in the glasses, some graham cracker and vanilla oreo crumbles, some cake cubes, some prepared cheesecake jello and cool whip

Looks tasty,  yes?

You can put it in a jar too

to take along on a picnic

with a cupcake paper decorating the lid

or maybe drop it into an organza sack

for a special treat for someone!

Key Lime Parfait or Pie in a Jar

Equipment

  • 8 1/2 pint jars and lids

Ingredients

  • 1 box coconut cake mix
  • 1 regular size box of lime jello
  • 1 regular size box of cheesecake flavor Jello instant pudding mix
  • 1 regular container of Cool Whip
  • 3 T key lime juice { I used Nellie & Joe’s}
  • zest of 1 lime
  • 1/2-1 cup graham cracker crumbs
  • 10 vanilla oreos crumbled

Instructions

  • Make the cake according to package directions and add 3 T Key West lime juice and some lime zest. Boil 1 1/2 cup water. Add 1 box of lime jello. Stir it up until it is dissolved. When the cake is done baking, pull it out and poke holes all over the top of the cake. Now just pour the liquid over the hot cake, and put it in the fridge to cool down. While the cake is cooling, make the cheesecake pudding. Combine the crumbled oreos with the graham crackers. When your cake is cool, cut it into cubes. When the pudding is set up, begin layering. Start with the crushed cookies and graham crumbs, then 3-4 cake cubes, 3 Tablespoons of pudding, and a layer of cool whip. Repeat, ending with a crumb topping and garnish with a slice of lime. This makes 8 parfaits, with 1/2 of the cake left over.

Notes

Double the cool whip, cheesecake pudding and cookie graham crumbs to make 16 parfaits or 1 large trifle.
