Take-out Tuesday, Red White & Blue Recipes for You!

Here are 2 easy, do-ahead recipes that would be perfect for your 4th of July celebration, and some fun cupcakes for your summer events. Whether you are traveling or staying at home, going to a picnic or a family reunion, a day at the lake or a beach weekend, these patriotic dishes of red white and blue are sure to bring smiles and satisfy appetites!
This Red White and Blue salad is perfect for doing ahead. You can toss everything together before hand and add the dressing right before serving. Pack it in individual jars or disposable containers for travel or picnics. The red is bacon, the blue is blueberries and bleu cheese, the white is raw cauliflower. You could easy add grilled chicken, strawberries, and substitute white cheddar or Monterey Jack~ Just keep it red white and blue! For more photos and recipes click here
Lots of fishing goes on at our beach house over the 4th of July and I like to treat my guys to these “Fisherboy” Cupcakes. They are actually red velvet cake with Sea blue buttercream icing. Topped with a fishing pole fashioned with a wooden skewer and some dental floss, this cupcake features the hoped for Catch of the Day red snapper gummy fish! This All American Berry Stuffed Toast is perfect to feed children and adults alike. The egg soaked bread encloses a sweet filling of strawberries, blueberries and cream cheese. Serve it with Maple or Blueberry syrup if you like but it’s pretty tasty just as is!
This couldn’t be easier or faster to put together. Just spread softened cream cheese on some thick slices of bakery style bread
Top with berries,
we like strawberries and blueberries but you could use peaches, blackberries, raspberries, just about any fruit you like! Sprinkle berries with sugar for added sweetness.
Top with another slice of bread
Beat eggs with milk and spices
and pour mixture over the stuffed “sandwiches.” At this point you can cover and refrigerate overnight, or you can pop in the oven and bake.
An hour or so in the oven and you have a red white and blue all American winner!
Here’s the recipe:

ALL AMERICAN BERRY STUFFED TOAST
Ingredients
- 6 eggs
- 3 cups 1/2 n 1/2 or milk
- 2 tsp vanilla
- 5 oz low fat cream cheese softened
- 1 cup strawberries sliced
- 1 cup blueberries
- 1 tsp ground cinnamon
- pinch of salt
- 8 slices of thick bakery style bread
Instructions
- Spray a deep baking dish with cooking oil spray.
- Spread each slice of bread with a generous layer of cream cheese.
- Lay 4 slices, cream cheese side up, in the bottom of casserole dish. Top with berries.
- Lay remaining bread slices, cream cheese side down forming 4 sandwiches.
- Beat eggs with cream, vanilla, cinnamon and salt. Pour over sandwiches.
- Cover and refrigerate overnight or bake uncovered at 350 for 45-60 minutes until golden and set.
- Serves 4-8. One half sandwich is a generous serving.
