Recipe Box, Serious Steak with Caramelized Onion Herb Butter

I think they thought it was Father’s Day…

HH and HHjr went to do some errands and this is what they brought home…

2 “GIANORMOUS”, you know giantly enormous,  bone-in rib eye steaks…

“I thought I’d make some Caramelized Onion Herb Butter to top these grilled steaks,”  HHjr said as he was putting a rub and a little steak marinade on them.

Excuse me, really?   Wow, ok!   He loves to cook and often cooks for us on the weekends.  I saw him looking through the May Southern Living earlier so I had a feeling something would arise from that~

While the diced onion was caramelizing low and slow in a skillet, he added minced garlic, salt, pepper, and lemon zest to a stick of softened butter.  Then he headed out to the garden and picked chives and flat leaf parsley.

Once it spent some time in the fridge, it set back up and looked like this

Oh, yeah, he also decided to top the steaks with Crispy Fried Sweet Onion Rings~ whoa…

So he went ahead and marinated the onion rings in buttermilk.   I do so appreciate an organized chef!  No photos, but I’m sure you can picture onion rings bathing in a white bath of buttermilk.  He fried the onion rings just before grilling the steaks and kept them warm in a low {200} oven.

Hot off the grill, the steaks were topped with the Caramelized Onion Herb butter and Crispy Fried Sweet Onion Rings

Oh, I forgot to mention that he made our favorite Magic Potatoes too…as if we didn’t have enough decadence going on here

The Caramelized Onion Herb butter and Crispy Sweet Fried Onion Rings came from the May 2013 issue of Southern Living. 

Caramelized Onion Herb Butter

Prep Time 30 minutes
Course condiment
Cuisine American

Ingredients
  

  • 1 stick butter softened
  • 1 small sweet onion such as Vidalia, diced
  • Kosher salt
  • freshly cracked black pepper
  • 1 garlic clove minced
  • 1 tsp lemon zest
  • 1 T chopped flat leaf parsley
  • 1 T chopped fresh chives

Instructions
 

  • Place onion in a dry skillet with 1 tsp of salt.
  • Cook over medium low heat, stirring often, for about 30 minutes, adding more salt half way through.
  • Onions are done when they are caramel colored.
  • Combine with all other ingredients and place in a bowl or roll into a log and chill. Makes about 1 1/4 cups.
  • Place a generous slice on top of a hot steak when serving and it will melt into the meat adding more flavor

Crispy Sweet Onion Rings

Prep Time 10 minutes
Cook Time 15 minutes
Buttermilk Soak 2 hours
Course Appetizer, condiment, Side Dish
Cuisine American

Ingredients
  

  • 1 large sweet onion cut into 3/8 inch slices
  • 1 1/2 cups buttermilk
  • Vegetable oil
  • 1 cup all purpose flour
  • 1/2 cup plain yellow cornmeal
  • 2 tsp salt
  • dash of cayenne pepper

Instructions
 

  • Separate rings and place in a mixing bowl and cover with buttermilk. Cover bowl and refrigerate 2-24 hours.
  • Pour oil to a 2 inch depth in a deep pan and heat to 360.
  • Stir flour with cornmeal, salt and cayenne.
  • Dredge onion rings in flour mix and lay out on to a baking sheet.
  • Fry in batches and drain on paper towels. Salt immediately after frying. Keep warm in a 200 oven until serving.
  • Serves 3-4 as a garnish, double the recipe to serve as a side dish.

  5. Pinning this as fast as my little fingers can do it!!! Wow…this looks SO good!!! I have had more than my quota of red meat for the month, but the next chance I get, I am going for this!!! Ramon LOVES a good ribeye, and he will be SO happy!!! Since we didn’t get to celebrate our birthdays in proper fashion a couple of weeks ago, I think I’ll surprise him with this meal next month!

    Oh my gosh. Rib eyes are my all time favorite steak. I got them last year for my husband’s birthday and it nearly sent me to the poor house! Ha…just kidding. I think the bone -in might be even tastier than the boneless. I’ll have to keep that in mind. Great photos too!
