Recipe Box, Stacked Tomato Salad

This is my version of Caprese Salad.   Tomato slices layered with bacon and drizzled with homemade Buttermilk Bleu Cheese on a blanket of fresh crispy greens~

This bleu cheese dressing is thin rather than thick, so it drizzles beautifully.

But any good olive oil will do.  It’s so simple, buttermilk, bleu cheese, lemon juice, olive oil and seasonings.  This recipe comes from Food Network’s Tyler Florence.  I added some light sour cream also because mine was just a little too runny.

I started to photograph outside but it was soooooo humid.  We have had like 25 feet of rain this summer, so when the sun does shine the humidity is about 1000%. You think I’m kidding? Nope

I currently have 3 of the biggest fattest blooms you have ever seen, but no others.  When I get a bloom it’s oversized and magnificent, but they are few and far between.  So far our garden has yielded 3 okra, and 2 jalapenos.  I bet you think I’m kidding again.  Nope, it’s so sad.  We HAD tomatoes, but something absconded with them before we could pick them.  I hate gardening, it’s too frustrating.  I am giving it up and supporting my local farmers!

BLT Salad with Buttermilk Bleu Cheese Dressing

Classic BLT sandwich in salad form with irresistible buttermilk bleu cheese dressing
Prep Time 20 minutes
Course Appetizer, Salad
Cuisine American

Ingredients
  

Buttermilk Bleu Cheese Dressing

  • 1 cup quality mayonnaise, like Duke's
  • 1/2 cup buttermilk
  • 1/4 cup sour cream
  • 6 oz bleu cheese, crumbled
  • 1 Tbsp fresh lemon juice
  • 1 Tbsp red wine vinegar
  • 1 Tbsp sugar
  • 1 Tbsp olive oil
  • 1/4 tsp salt

BLT Salad

  • 1 ripe summer tomato per person
  • 2 crisp romaine leaves per person
  • 2 crispy cooked bacon slices per person
  • 1/4 cup Buttermilk Bleu Cheese Dressing per person

Instructions
 

Buttermilk Bleu Cheese Dressing

  • Combine ingredients in a large jar and stir well and shake to blend
  • Refrigerate for several hours before serving to blend flavors
  • Store in refrigerator for up to 2 weeks
  • Makes about 2 cups dressing

BLT Salad

  • Slice each tomato into 6 thick slices
  • Place romaine leaves on plates or large platter
  • Make 2 stacks with each tomato by layering tomato slices with bacon: top one tomato slice with 1/2 strip of bacon, repeat, ending with third tomato slice on top
  • Secure tomato stacks with tooth picks and place one stack on each romaine leaf
  • Drizzle dressing over all

Notes

Plan on 1-2 romaine leaves and tomato stacks per serving

  4. This looks so yummy! There is a little bunny that lives around my patio. He is so cute but he keeps biting off the tips of my flowers. I keep asking him why he doesn’t visit my neighbor who has a garden. I can see her tomatoes and squash from my backdoor. You’d think he would stay there instead of at my place.

    Oh what a delicious & delectable stack with the bacon and Buttermilk Bleu cheese dressing! I’m so glad I’m not a farmer, too much rain or not enough.I’d rather be able to paint tomatoes than grown them 🙂 We didn’t plant tomatoes this year for the first time and I’m so glad, they would have burst and been flavorless with all our rain.

    I have to sit my camera on the porch for 30 minutes to acclimate and defog the lens before I want to take photos, no grabbing it and dashing from the a/c into the blast of humidity and heat 🙂

    • You are so right of course about acclimating the camera, I have so little patience!! Just got this week’s weather report and they said, wet week ahead! So looks like more is coming your way too!
