Take-out Tuesday, Picnic Chicken

Pssst….before we talk chicken I have to tell you that yesterday I was a guest blogger over at the Style Sisters! Exciting!

Now on to the chicken!

I call this Picnic Chicken because it’s sort of like fried chicken that you would take on a picnic, but it’s so much better!  It’s so easy too, you can throw it together in no time at all~

Tender, tasty, buttery, tangy, crispy bites~not exactly guilt free BUT!! It is baked not fried~

Potato Chips! You pair that with a little Ranch seasoning and some Parmesan cheese and you know this is going to be good!

You can make your chicken pieces any size or shape you want

I try to always marinate my chicken in buttermilk for a day or two, which is why is looks a little milky.  The pink mat is a plastic mat that I use to cut raw chicken because it can go straight in the dishwasher when I’m through.

I cut the whole boneless chicken breasts in half and then each half into 3-4 chunks so I ended up with large chicken nuggets. All the more area to cover with delicious crispiness!

Crush the potato chips in a baggie with a rolling pin.  I like to use regular flavored Ruffles, but of course any chip or cracker would work too~

Melt 1/2 stick butter in a shallow bowl.  Mix the ranch dressing mix, Parmesan and crushed chips together in another bowl and set up a dredging station.

Once you’ve dipped all the chicken pieces in butter and crushed goodness,

sprinkle the top of casserole with any remaining crunchies and drizzle with the rest of the melted butter

Bake at 350 for about 45 minutes, until it is golden and amazing!

Here’s the recipe:

PICNIC CHICKEN

This chicken is baked, coated with crispy potato chips and Ranch seasoning, it's even better than fried!
Prep Time 15 minutes
Cook Time 40 minutes
Course Appetizer, Main Course
Cuisine American
Servings 4

Ingredients
  

  • 2 boneless chicken breasts
  • 3 big handfuls of potato chips 2-3 oz.
  • 3 T Ranch Dressing Mix
  • 3/4 cup shredded Parmesan cheese
  • 1/2 stick {4 T} butter, melted

Instructions
 

  • Cut chicken into large nuggets or tenders.
  • Crush potato chips and mix with Ranch seasoning, and Parmesan cheese.
  • Dip chicken pieces first in butter, then dredge in chip mixture.
  • Place pieces in an oil sprayed baked dish, close together. Top with any remaining chip mix and drizzle with any remaining butter.
  • Bake at 350 for 30-45 minutes until golden and crunchy. Serves 3-4

    Oh my Jenna…chicken dipped in butter and in dredged potato chips, ranch dressing and parm…I’m not counting calories when I gobble this up! I have to pin to my picnic/tailgating board, I love the idea with football season around the corner! Wonderful on top of a salad to make it a little guilt-free 🙂
