Recipe Box, Grilled Peach Salad with Raspberry Balsamic Glaze

During these last weeks of summer I have been overloading on all my favorite fruits and vegetables that will so soon be unavailable, sniffle

I was dying to make a grilled peach salad while they were still available.  This salad would be good with any stone fruit, plums, nectarines, pluots~

I picked up a bottle of Raspberry Balsamic Glaze* in the grocery store…Pricey? Yes.  A little goes a long way?  Yes.  Worth the investment? Yes and Yes! This stuff is amazing!  All you need is a little drizzle and it will make your salad sing!

a dollop of marscapone cheese and a drizzle of Raspberry Balsamic Glaze and your tastebuds will be in heaven!

I put some real butter on the griddle for them to sizzle in.  I grilled my peaches on a panini press because none of the manly types were around to fire up the grill for me.

You have to look closely to see the ridges, I didn’t get the blackened grill marks that you see in pretty magazine shots, but I really didn’t care, I just wanted a bite!

A dollop of cheese and a drizzle of raspberry balsamic glaze and this salad was on the table!

Here’s the recipe:

FRESH GRILLED PEACH SALAD with RASPBERRY BALSAMIC GLAZE

Ingredients
  

  • 1-2 fresh peach halves per salad
  • fresh salad greens such as mesculan mix
  • Raspberry Balsamic Glaze or any Balsamic glaze
  • 1 -2 tsp marsacapone cheese or fresh ricotta or mozzarella cheese
  • butter

Instructions
 

  • Brush peaches with melted butter and grill on an outdoor grill, panini press, or skillet for 5 minutes, until warm and sugars start to caramelize.
  • Place peaches on a bed of fresh greens.
  • Place a teaspoon or 2 of cheese in the center of peach halves and drizzle with glaze. Serve with additional glaze if desired.

Notes

*this glaze is pretty sweet, substitute a more tart balsamic glaze if you prefer more tang.

    This looks wonderful Jenna! I’ve never had luck getting grill marks on fruit no matter how hot the grill or press is. Those stylists must use sneaky tools for magazine shoots. Love balsamic glaze, it IS well worth it and lasts a long time. I’ve never tried raspberry glaze though what a treat! Enjoy the flavors of summer while you can 🙂

    • Thanks so much for telling me this, I have been looking for those pesky grill marks all over the place! I have a friend that used to be a food stylist for Southern Living and she has told me about some very dubious things they do!

    I haven’t tried grilling fruit yet. I do like the idea of dressing it with a balsamic glaze and mascarpone cheese. Will have to keep this in mind.
