Take-out Tuesday, Fajita Pizza

This recipe is actually  a great leftover makeover.  I can’t take any credit for this, it was all my son’s idea.  After last week’s Fiesta party, we had a ton of fajita steak and chicken left over. The caterer we used was incredible and added 10 extra servings for free just because they wanted to be sure we had plenty!! {Coquina Superior, Birmingham, Al} I was just going to warm it  and serve it the usual way with tortillas and the trimmings, but what was I thinking?  That was way too boring apparently and HHjr showed up with a pizza crust and an idea…a fajita pizza~

Using a pre-made pizza crust {Momma Mia’s} he made a sauce with sour cream and salsa

Chopped cherry tomatoes and onion

Next he added shredded lettuce, which I thought was weird, but I didn’t want to hamper his creativity…

Then came and mixture of the fajita sliced chicken and steak, onions and peppers.  The meat had a very flavorful marinade~

Then he topped it with a drizzle of hot sauce, because he likes things spicy

Next came grated cheese

and off to the grill it went

In no time at all, the pizza was ready

So next time you order fajitas in a restaurant, make sure you get the leftovers to go!

You could really load this up with lots more veggies…maybe enchilada sauce instead of sour cream and salsa, oh and I wish he had added black or refried beans…and wow, can you see the endless possibilities here?!!

Put a little creativity into your next take-out!!

Here’s the recipe:

FAJITA PIZZA

Prep Time 10 minutes
Course Appetizer, Main Course
Cuisine American, Tex-Mex
Servings 1 pizza

Ingredients
  

  • 1 pizza crust pre-made thin crust such as Moma Mary’s or Boboli
  • 1/4 cup sour cream
  • 1/4 cup salsa
  • 1/2 onion chopped
  • 10 cherry tomatoes halved
  • 1 cup shredded lettuce
  • chopped or sliced cooked chicken and/or steak and peppers and onions
  • hot sauce to taste
  • 1 cup grated cheddar cheese

Instructions
 

  • Combine sour cream and salsa and spread over crust almost to the edge.
  • Top sauce with onion, tomatoes and then lettuce.
  • Top with fajita mix.
  • Drizzle with hot sauce and then top with cheese.
  • Bake according to crust package directions or grill until done. Makes 1 pizza
