Recipe Box, Fast & Fabulous Football Food

My favorite part of football season is the parties, naturally, and around my house there are usually lots of hungry fans gathered.  Over the Labor Day weekend we watched the first college games of the season as well as US Open Tennis and while the guys were grilling chicken wings, DD & I whipped up some dips that were fast and fabulous!

When we found out that Saturday was National Bacon Day, we HAD to make sure it was on the menu.  But we wanted something lite, you know with bacon, hahahahaha  BUT, when I looked at my Pinterest boards there was a very appealing Bacon, Corn & Guacamole from homeiswheretheboatis. Perfect!

We popped over to the grocery store with about 1 million other Labor Day beach goers and grabbed a few things but the avocados were HARD AS ROCKS.  DD, being the brains of the family, suggested using ready made guac…….huh, that’s pretty brilliant….

So we improvised and used this as a base and made a 4 layer version of traditional 7 layer dip and it was devoured

We were too lazy  didn’t want to add onion since NG {Nicest Guy, DD’s hubs} doesn’t really like onions, so we added chopped sweet red pepper, 2 ears of oven roasted corn and 8 slices of crispy bacon, and a little S&P and it was Happy National Bacon Day!

It was awesome!!  And we felt good about getting some veggies on the menu,  this will be making a regular appearance at our house!

The Sausage Queso was a big hit too,

We used ready made queso {Costco brand, it’s wonderful} and added 1/2 lb of breakfast sausage, and 1 jar of bean and cheese dip

I know Julia Child would not approve but hey, this was my “Laborless weekend”

Which in reality it wasn’t because I did 8 loads of laundry on Monday after the kiddos left

Here are the recipes:

BACON & CORN GUACAMOLE DIP

Prep Time 5 minutes
Course Appetizer, condiment
Cuisine American, Mexican, Southern

Ingredients
  

  • 2 ears fresh corn cooked {roast in oven or grill for extra flavor}
  • 8 slices bacon cooked and crumbled
  • 1/2 red pepper chopped
  • 1/2 guacamole prepared guacamole
  • S&P

Instructions
 

  • Combine ingredients, using as much guacamole as you prefer and season to taste. Serves 6

add more guacamole if desired

SAUSAGE & BEAN QUESO DIP

using prepared dip and queso makes this a breeze!
Prep Time 15 minutes
Cook Time 15 minutes
Course Appetizer
Cuisine American, Tex-Mex
Servings 8

Ingredients
  

  • 16 oz prepared queso dip
  • 1/2 lb breakfast sausage
  • 14 oz prepared Bean & Cheese Dip {Totitos}

Instructions
 

  • Brown sausage in skillet, crumbling as it browns and drain well.
  • Wipe out skillet with a paper towel and add sausage, queso and bean dip back to skillet.
  • Cook mixture over medium low heat until melted and blended.
  • Transfer to a 1 quart baking dish and bake in the oven at 350 for 15-20 minutes to get mixture thoroughly heated. Serve with sturdy corn chips. Makes 8 servings.

    I didn’t know it was NBD or we would have had another dish on the menu. I’ve got to make this dip, it looks delicious and I love how easy peasy! Love those jerseys, looks like this family celebrating too……………….

    I love both of your takes on two of our favorites. I haven’t tried Costco’s Queso – didn’t even know they had it – maybe they don’t here as they do some regional things Where did you find it?

    I also love adding the corn and bacon to the 7 Layer Dip. Now I want to make some! Dips are always a hit with us.

    Alas, BYU lost and my son and husband had to rewatch the pain last night! What were they thinking. Big first home game on Saturday with Texas! Even if they lose the food will be great right?

    • Ha ha, sounds like my husband!! The queso at Costco is usually near the refrigerated pastas and other dips and salsa. It comes in a 2 pack and my store [Alabama] has carried it for as long as I can remember so I hope you can find it!     Jenna, Wholly Guacamole is the perfect answer to hard-as-a-rock avocado! I love your addition of the red pepper and your bounty of bacon to the guac for National Bacon Day! And your Sausage Queso looks like it would satisfy the most die hard fan~ I wish we had a Costco nearby. BTW I could eat those cute ‘Bama fans with a spoon 🙂
