Recipe Box, Caramel Apple Pecan Pie Cake

Taking a moment to remember this day…and sending prayers to all who lost so much…

This ooey gooey good dessert is perfect for the upcoming Autumn season.  Full of apples and pecans, it is pretty hard to resist anyway and with some melted caramels on the top, it is downright decadent.

I adapted this recipe from one recently posted by Tonia over at the Gunny Sack, Apple Bars.  I changed some ingredients and added some things and mine ultimately turned into a dessert that is much more like a pie, even though it’s made from a cake mix and is supposed to be a cookie! It was definitely a happy accident!

Unfortunately, it is way too easy to make~you can whip it up at a moment’s notice~I made this Saturday in about 10 minutes while there was total chaos in my kitchen…It looked like Legoland exploded…

I decided to just “dodge” the Coast Guard and carry on

You make a batter with the cake mix, butter and egg.

Press it into a 9 x 13 baking pan, use floured fingers, this batter is sticky!

Toss the apples with sugars and cinnamon

Top the batter with apples, pecans and butterscotch chips

Drizzle all over with the sweetened condensed milk, just like 7 layer bars, yum, and bake.

While cake/pie/cookie is baking, cut up some caramels.  Not fun.  But delicious!  Eat a little square for your efforts

Near the end of cooking time, after about 35 minutes add the caramel pieces over the top.  Return to oven for 5-10 more minutes, until cake is golden and set.

NOTE:  If the caramel cooks too long it gets really hard, so add it at the very end.  You can eliminate it altogether, if your worried about sticky teeth and this pie cake will still be divine!  Or use a caramel ice cream topping drizzled over your pie cake when serving.

Here’s the Recipe:

CARAMEL APPLE PECAN PIE CAKE

Prep Time 30 minutes
Cook Time 45 minutes
Course Dessert
Cuisine American

Ingredients
  

  • 1 box golden yellow cake mix
  • 1 stick butter softened
  • 1 egg
  • 6 oz. butterscotch chips
  • 2 apples cored and diced {no need to peel}
  • 2 T brown sugar
  • 2 T white sugar
  • 1 T ground cinnamon
  • 1 cup pecans chopped
  • 14 oz. can sweetened condensed milk
  • 16 caramels cut into 1/4s*

Instructions
 

  • Mix dry cake mix with butter and egg until it forms a soft batter and press into a 9 x 13 baking dish that has been sprayed with cooking oil spray. Flour fingers to keep dough from sticking to your hands.
  • Toss apples with sugar, brown sugar and cinnamon and place on top of batter.
  • Sprinkle with pecans and butterscotch chips.
  • Slowly pour condensed milk overall in a thin stream, covering every section of the pan. Bake at 350.
  • Add caramels during the last five minutes, just to melt, if they bake too long they will get hard.
  • Baking time depends on how much liquid the apples have so time will vary.
  • Check at 30 minutes and then every 5 minutes until cake is brown and set. Mine took 45 minutes. Let cool completely. Cut into squares to serve. Makes 1 9 x 13 cake.

Notes

*Be careful not to get the caramels too hard, omit if desired~the cake will still have a rich caramel flavor from the brown sugar and butterscotch chips
Be sure to bake your cake until set, the fresh apples add a lot of moisture!

    Oh my this looks and sounds so decadent…apples, sweetened condensed milk, butterscotch chips and caramels! I do have a thing about sticky teeth, I thought I was the only one 🙂 I always wondered why Kraft didn’t make a large “bar” version of caramels you could unwrap in one piece to melt or chop. Unwrapping those individual caramels is a chore and well worth a reward!
