Party Panache, Apricot Pineapple Gorgonzola Cheese Spread

I like to go to the grocery store alone.  I have to think.  HH loves to go to the grocery store and often insists on going with me.  While this is challenging   sweet, and often annoying  helpful,  he’s not a shopper.  He would never impulse buy, ever.  This is a good quality, but he tends to make grocery shopping like a race, as in let’s see how fast we can get in and get out.

Which is why I bought Apricot-Pineapple Preserves instead of Apricot.

Turns out it didn’t matter, you can’t mess this up!  This cheese spread and just about any flavor of preserves will work~

Bacon, green onion, cream cheese, gorgonzola cheese and the sweetness of the preserves come together for an easy cheese spread that just zings flavor!

Make it a few hours ahead to let the flavors blend

Pineapple or not, this was lapped up during last Saturday’s football party.  I mean LAPPED UP GONE! Even Super Boy thought it looked good!

and after one bite, you’ll be back for more!  HHjr declared the pineapple “made” this dish~so I guess I didn’t mess it up after all!

She and her cousin Big E discussed a few plays~

I fully intended to shape this into a football, and garnish it with bacon for the seams, so just picture that ok?  There was entirely too much going on for me to be molding footballs out of cheese spread.  But it would be super cute!

Here’s the recipe:

APRICOT PINEAPPLE GORGONZOLA CHEESE SPREAD

Prep Time 15 minutes
refrigerate 2 hours
Course Appetizer, Snack
Cuisine American

Ingredients
  

  • 8 oz. cream cheese softened
  • 4 slices thick sliced bacon
  • 4 oz Gorgonzola crumbles
  • 1-2 green onions chopped
  • 1/2 cup apricot-pineapple preserves

Instructions
 

  • Cut bacon into 1/2 inch dice and cook until crisp. .
  • Drain well and combine with the rest of ingredients and stir/mash together with a spoon and fork
  • Chill for 2-3 hours before serving. Will keep overnight.
  • Serve with wheat thins, or small baguette slices, or any non flavored cracker. Great with celery sticks too. Makes about 2 cups spread.

Try this recipe next time when you need a quick crowd pleaser!  This makes a great tea sandwich spread too for a shower or luncheon~

    What a unique spread, Jenna. I’m going to have to try this. I am laughing about your husband. Mine wants to go with me to shop – not the grocery store, but clothes and home décor! When we arrive at the store, he always says, “now I don’t want to stay in here very long”! I’m thinking, okay, so. why did you want to come with me? Those children are precious – even if they are wearing Alabama outfits! laurie

    • Oh that is awful! Today when we went to the store I stopped at the nursery to look at their pumpkins and bought 2 big ones and 4 small ones~when they said the total was $21 he was shocked! He said they weren’t worth $2! I’ll have to go back alone next week!! He would die if he ever went to Home Goods with me! Maybe your husband figures if he goes with you you won’t buy much!!     Oops, I forgot. you asked about my meat fork. I have a couple of those. You are supposed to stab the meat with the fork and then push the handles together and the piece slides down to push the meat off the fork and onto your plate. They do work, and I like using them, but when others see them, they can’t figure out what to do with them. It does make for a good laugh, just watching others try to figure them out! laurie

  3. The little ones are SOO adorable together with their outfits…you will cherish that picture forever. This apricot dish sounds so wonderful…passing this on to my mother in law…apricots are her favorite.
