Here’s the recipe:

APPLE, PEAR and WALNUT GORGONZOLA GALETTE

Prep Time 30 minutes
Cook Time 20 minutes
Course Main Course, Side Dish
Cuisine American
Servings 4

Ingredients
  

  • 1 refrigerated pie crust dough circle
  • 1 apple
  • 1 ripe pear
  • 1 large vidalia or sweet onion
  • 1-2 oz walnuts chopped
  • 2-3 oz crumbled Gorgonzola cheese* or bleu cheese
  • 2 T butter divided
  • 1 T olive oil
  • 1 egg

Instructions
 

  • Peel and cut onion into 1/4″ slices.
  • Place in skillet with 1 T butter and olive oil and cook over medium low until caramelized, stirring occasionally, about 25 minutes.
  • Place pie crust circle on a silpat or piece of parchment paper on a baking sheet.
  • Distribute onions evenly on crust leaving a 2 inch border around the edge.
  • Wash fruit and cut into fairly thin slices and place on top of onions.
  • Sprinkle with walnuts and cheese.
  • Cut 1 T butter into tiny pieces and dot fruit mixture.
  • Fold up edges by starting with a 3 inch edge, turning and pleating dough as you go around, forming the edge of the galette.
  • Beat the egg and brush over the galette’s edge.
  • Bake at 400 for 20 minutes or until galette looks done and pie crust is golden. Let sit for 5-10 minutes before cutting. Serves 4-6

*substitute sharp cheddar for gorgonzola if desired

  4. I pinned this because these are complimentary ingredients and since you said it is really delicious. I never post anything I think is so-so, and it upsets me to make a recipe only to have to try to do something to salvage it. What a waste of time and money! But, when I find a good recipe I end up trying to force-feed everyone, I want them to love it like I do. 🙂

    Hi, Jenna! I just wanted you to know I made this today – only my local grocer had no Gorgonzola. I made it with fresh Parmesan, which I always have on hand. It was delicious!!! Yesterday, Spunky Daughter made your Rolo Cake Mix Cookies. (Yes, it’s Painted Apron week!) Bad move, those cookies. I can’t stay out of them, and I sooo need to drop a few pounds. All those miles of bike riding this morning maybe balanced it out!?!?! I hope you don’t mind if I blog about your recipes soon. Their yumminess needs to be shared! Of course, I will link to your posts so readers can copy the recipe from your site. 🙂

Of course you can blog about the recipes, I am flattered! I should have mentioned in the galette recipe that any bleu cheese would work, but of course Parmesan is always delicious! Jenna
