Recipe Box, Pimento Cheese Cookies with Strawberry Icing

It’s time to get out your pink feather boa and make some Valentine treats!

This is the EASIEST cheese straw type recipe that I have ever made,  and it is my new favorite!

You use prepared pimento cheese, flour, butter and pecans, that’s it!

mix the cheese, butter and flour  together

add pecans

and form dough into a log or two

refrigerate

slice and bake!

You can also roll or pat out the dough and use a cookie cutter

These cookies are delicious plain and delicious topped with strawberry preserves.

Have you ever had the popular cheese ring with strawberry preserves in the center, well, this is just a different version of that wonderful sweet and savory combination

These would be great for all the upcoming sporting events too, make them into football shapes for Super Bowl.  Top them with orange marmalade if you’re a Broncos fan! You could always serve the preserves on the side for guests to spread as desired

Here’s the recipe:

PIMIENTO CHEESE COOKIES with STRAWBERRY ICING

Slice and bake or use a cookie cutter to cut into special shapes
Course Appetizer
Cuisine American

Ingredients
  

  • 1 cup flour
  • 1 cup prepared pimiento cheese [I like Palmetto brand]
  • 1/4 cup butter [1/2 stick]
  • 1/2 cup chopped pecans
  • Strawberry preserves [optional]

Instructions
 

  • Beat cheese, butter and flour to form dough.
  • Add pecans and mix to incorporate.
  • Form dough into a log, or two logs, wrap in saran and refrigerate.
  • Slice into 1/4″ rounds and bake on a silpat or parchment paper lined baking sheet at 350 for 10-12 minutes.
  • Dough can be rolled or patted out and cut into shapes.
  • For Valentine cookies, use a heart cookie cutter and “ice” with strawberry preserves when cool. Makes about 2 dozen

Notes

Dough can be kept in refrigerator for several weeks

    I love your feather boa, your tree and all of your fireplace decor! I left up a lot of our “Frozen” decor for January, but the dining room got lots of red started for Valentines Day. The trouble with Valentine’s Day is that it come half way through the month so it is here before you know it and you just have to decorate early for it!
    These cheese straws look and sound heavenly. I am sure I couldn’t stop eating them!
