Recipe Box, Strawberry Waffle Parfait Bites

Mother Nature doesn’t seem to be through with her merriment yet. After dodging tornados for 2 days in Birmingham here’s what we were greeted with Wednesday~ Biblical flooding is what they are calling it
This is the west end of Ono Island in Orange Beach Al. What’s wrong with this picture? There are normally piers and boats in front of the houses and a big sandy peninsula of land jutting out into the water…That black mass near the center front of the photo is a clump of trees on the now submerged sandy peninsula…
This is our backyard. The pier is under 3 feet of water
It usually looks like this…sigh…
And it looked like this just 4 days ago! It’s not always sunshine and good times on the Gulf Coast!
I’m sure I’ll have more tales to tell…and yes, we are so lucky compared to the thousands of people who lost so much in these horrific storms…so I am counting my blessings, praying for them and being grateful…
Okay, on a much cheerier note~
You know what May 1 means?
Strawberry season is almost here!
These little breakfast bites are kind of like dessert
You don’t have to use whipped cream, but it sure tastes good!
I used organic mini waffles as the base
fresh berries, strawberry cream cheese, and granola
stack things up anyway you like
It’s ok! Play with your food!
These are perfect for a hot summer morning when you don’t feel like a heavy breakfast
Calories? 50 – 75 per parfait, depending on how you stack them~ and be sure to read the granola labels carefully, some are full of fat and sugar
Crispy, crunchy, creamy, dreamy
You will probably want to eat at least 1 or 3!

Strawberry Waffle Parfait Bites
Ingredients
- Frozen mini waffles
- fresh strawberries
- strawberry cream cheese
- granola
- light whipped cream
Instructions
- Wash strawberries and pat dry. Slice some and leave some whole.
- Toast waffles.
- Spread waffles with a thick layer of cream cheese and sprinkle with granola, pressing granola into cream cheese. Top with a dab of whipped cream and a strawberry. OR, top with sliced berries and add another waffle, spread with cream cheese, on top, forming a sandwich. Pipe whipped cream on top of waffle “sandwich” and garnish with a whole berry. Create your parfaits in various ways and arrange them on a decorative platter to serve.

I’d like to stack them like 100 and call it 50…k??? But on a serious note, I’m sorry to see the flooding but glad it was just your dock and not the house! The weather has been extremely crazy of late, hope it all calms down soon:@)
Mother Nature has been packing a wallop recently Jenna! We were fortunate to miss the flooding from this storm they were predicting for us. It’s bad when you have to swim out to your boat! I’m glad you didn’t have any structure damage to either home. I tend to eat during stress AND celebration so I’d gobble down lots of your mini waffle bites. What a fun app for a party or brunch! Hope the worst of the weather is behind you 🙂
These little parfait bites look so good – and easy! The flooding looks terrible. Are any of the homes under water? I couldn’t really tell by the picture. Anyway, I hope there wasn’t too much damage. We have truly had a challenging weather year!
I’m still working through your posts so I haven’t gotten to the part where you say all is well at the house, but my fingers are still crossed. These look so very yummy ans easy too. I can even see doing a version with peanut butter and bananas. . .mmmm. Thanks for the idea. Oh, and I’m totally pinning this too. Please let me know if that’s a problem!
