Holidays, Cinco de Mayo!

Cinco de Mayo is tomorrow!  It’s such a fun and festive way to celebrate Spring and indulge in your favorite Mexican or Tex-Mex dishes

Just in case you don’t have anything planned, I rounded up some of my favorite recipes and tabletops to give you some last minute ideas

You can probably make a Centerpiece from things that are right in your pantry! Pull out some colorful cans and add a bowl of tomatoes, or any fresh vegetables, onions, garlic.  Color is key here, wacky and tacky!

Why not start with Fiesta Corn Dip,  and serve it with a Grande of salsa and a sombrero full of tortilla chips!

I posted this recipe for Taco Soup not too long ago.  It is literally made by browning some beef and opening  a few cans and letting it hang out in the slow cooker all day~

Just set up a Buffet with grated cheese, sour cream and other toppings and let everyone help themselves

Sunflowers are a great way to get a lot of impact, they always make any space a fiesta!  Stick them in some painted wine bottles for a rustic look~

Not Guilty Quesadillas are a wonderfully satisfying dish, full of beans and veggies, no one will miss the meat~

Two of my go to dinners when I’m short on time are Baked Tacos

and Fajitas.  The great thing about fajitas is that everyone can make their own, just set up a colorful spread and let everyone create their plate~

You can also whip up a Fajita Pizza with some left over steak or rotisserie chicken, a pre-made pizza crust and some chopped veggies from the deli

My very favorite Mexican dish is Enchiladas and I have 3 delicious versions,

Dessert? No problem, how about some Sombrero cookies

These are easy to whip up using premade sugar cookie dough, frosting in a can, candy and sprinkles

    Jenna, I love, love, love! This is a treasure trove of recipes and inspiration. I just pinned away from your Pinterest Fiesta board. I especially love the first Fiesta table – tons of inspiration there! I was going to go lazy and just use the pictures from last years Cinco De Mayo party. My son’s birthday is May fifth so I like to celebrate his B day with a Fiesta. Because we just had our family Easter last weekend (so all of the children could come) we will not have our Fiesta until next Sunday and combine Mothers Day and the Fiesta together.     We are about to sit down with a strawberry/jalapeno margarita and some chips and queso. I think Cinco de Mayo is bigger here than in Mexico. That’s OK with me!

  12. I hope you had a great Cinco de Mayo! Mine was OK. I fixed soft tacos that were pretty good. No margaritas, though. The cost of limes is SO CRAZY right now!!! I think they were “on sale” for $1.50 each. That’s nuts!!!!!!! There’s no way that was gonna happen!!!

    I just pinned the taco soup recipe. That sounds really good. The guilt-free quesadillas are lookin’ pretty tasty, too. If something can be delicious without the guilt, I’m all for it!
