Recipe Box, Fresh Vegetable Salad with Buttermilk Dressing

Mary over at Home is Where the Boat is has a recipe for Cobb Salad Boats with Buttermilk Basil Dressing

I wanted to make a side salad, instead of a main dish salad, so I decided to try this dressing on some simple sauteed veggies atop of fresh crisp lettuce

Saute fresh corn, red pepper, asparagus and green onions in a little olive oil until everything is crisp tender [or any fresh veggies you want]

Place the warm vegetables on top of cool crisp romaine lettuce and or fresh spinach leaves

Give it a little drizzle of the fresh buttermilk dressing~ just a little, you want to taste all those veggies too~

The dressing is so easy to make, and the fresh herbs are what make it sing

Herb Buttermilk Dressing

Homemade dressing tastes so much better than bottled, and this dressing can be made in under 5 minutes!
Prep Time 4 minutes
Course condiment
Cuisine American

Ingredients
  

  • 2/3 cup buttermilk
  • 1/3 cup mayonnaise
  • 4 fresh basil leaves chopped
  • 3-4 fresh parsley springs chopped
  • 1 clove garlic
  • 1 tsp kosher salt

Instructions
 

  • Mash garlic with salt in the bottom of a jar. Add remaining ingredients and shake. Refrigerate at least one hour.

I know I am guilty of buying bottled dressing, thinking it’s so much easier,  but fresh is so much better and this one is a cinch to make~ thank you Mary!

    Happy Cinco de Mayo Jenna! I love the idea of adding all those fresh veggies to a skillet and then topping your salad with them! I just planted some basil yesterday so I don’t have to buy those anemic bunches at the grocery store. I see you’re using Helman’s instead of the Southern staple, Duke’s to mix your mayo 🙂 Hope you enjoyed some boat time over the weekend!

  2. I’ve just about stopped purchasing store bought dressing. It is so bad for you! I love buttermilk dressing and haven’t had it in a while. I’ll use light Duke’s mayo – my favorite – and hope that works as well.
