Take-out Tuesday, Derby Day Biscuits

Did you watch the Kentucky Derby?

I think it’s tons of fun to see everyone dressed up and sipping mint juleps~ [my niece and her hubs decked out in a seersucker suit, bow tie and white bucks!]

We watched it while we were on the coast with some friends, and I made these treats before hand and took them with us so all I had to do was pop them in the oven on Saturday morning

I made three versions, plain, sweet and savory~

You can use canned biscuits, homemade rolls, anything you like.

I used Sister Shubert’s Parkerhouse Rolls and Orange Rolls and Archer Farms Spiral Sliced Ham*

For the sweet version I paired ham with orange rolls and orange marmalade

I cooked the ham pieces in a skillet for a few minutes on medium high to caramelize them and add a little color

For the plain biscuits, I paired ham with a Parkerhouse roll

For the savory version, I made ham biscuits with fig jam and bleu cheese butter, yum

I would describe fig jam as a little sweet and a little savory, and paired with bleu cheese and ham it will delight your tastebuds!

This more savory version would be perfect for a cocktail party or an afternoon nosh~

It was so convenient to have these assembled ahead of time.  I popped some of the orange roll and plain versions in the oven for 15 minutes and they were hot and delicious for breakfast.

The Fig and Bleu cheese butter version are best at room temperature, and delicious with a frosty mint julep or a nice glass of wine~

Derby Day Biscuits

Prep Time 20 minutes
Cook Time 15 minutes

Ingredients
  

  • Parkerhouse Rolls [I use Sister Shubert’s] or use biscuits frozen, in a can, fresh or homemade
  • Orange Rolls [I use Sister Shubert’s] or use frozen rolls, rolls from the bakery, rolls from a can, or homemade
  • small slices of spiral sliced or deli ham [I use Archer Farm Spiral Sliced Ham from Target*]
  • butter
  • bleu cheese
  • orange marmalade
  • fig jam

Instructions
 

  • Bake rolls according to package directions and let cool. Carefully slice rolls in half. Saute ham slices quickly over medium high heat in a skillet with just a little butter or olive oil, until they gain a little caramelization.
  • Plain: Place 1-2 ham slices in each roll. Spread rolls with mustard or butter to taste, or leave them plain.
  • Orange: Place 1-2 ham slices on each roll bottom. Spread roll tops with a layer of orange marmalade and put on top of ham, marmalade side down.
  • Savory: Combine equal amounts of bleu cheese and butter and spread on bottom of rolls. Add ham and top with a generous layer of fig jam and enclose with roll top.
  • Bake the plain and orange rolls covered for 10-15 minutes to heat if desired. Serve the savory fig and bleu cheese rolls slightly warm or at room temperature.

Notes

*Archer Farms is Target’s brand. This is my favorite spiral sliced ham, it is full of flavor and is reasonably priced. Target sells it in 1/2s and 1/4s. I buy the 1/4 size and find that it is perfect for several meals, then there is plenty for casseroles or biscuits

Southern gone a little sassy~  From now on there will be a stash of these biscuits in my freezer!

This is such a great do ahead and take along recipe that everyone is sure to enjoy!

    How to pick a favorite, but since I’m crazy about combining fig jam and blue cheese, I guess that would be it. We meant to watch the derby but completely forgo about it!

    Yum! I’ve never gotten into derby day, but it looks like such fun. On Saturday, we went for a motorcycle ride and forgot to watch the derby. When we realized what we’d done, we were sorry to be missing the race, the outfits, the hats – all of it! Your rolls really look like the perfect treat for derby watching. 🙂

  4. Particularly like the “easy” rating! I love the taste of Derby Day foods of all sorts, and this is a fresh one to add to the queue! We get all dressed up in our finery and watch it while eating great food most years. Didn’t get to this year. 🙁

    • I am sorry you didn’t get to dress up this year A, what a fun idea!! One year the girls actually put on hats at our house~ it is such a fun little event to get excited about!

    These look oh so good Jenna! Dalmatia fig spread is our favorite and the best, I could eat it with a spoon! I was pulling for Wicked Strong and thought it would have made a great name for a cocktail for a derby party too 🙂 Love seeing everyone decked out in their derby finery!
