Recipe Box, Figgy Bleu Pizza with Pears and Bacon

I know, yet another pizza….I have a passion for flatbreads, open face sandwiches, tarts…

especially in the summertime 😎

I think everything should be served atop an incredible crust with the toppings piled high!

After enjoying the Fig and Bleu Cheese Butter Biscuits for Derby Day, it didn’t take me long to decide to try this great combo on my favorite pizza, Flatbread with Pear, Bacon and Bleu Cheese

Of course I had to throw in some roasted garlic too~

Partially bake your crust and drizzle it with olive oil.  Squeeze out the garlic and spread it around with the back of a spoon

Next spread a layer of fig jam, use your fingers to smush it into a thin layer…smush is a word right?

Next comes the bacon, since it is already completely cooked, it can be on the bottom

Top with pear slices

and sprinkle with lots of bleu cheese

If you’re not a fan of figs, try this anyway it is sooo good,   be sure to try it with just pears, bacon and bleu, a combination definitely sent from heaven…

I love to make this for dinner when it’s just me, and save the leftovers~you can reheat a slice 3-4 days later and it is just as tasty 🙂

FIGGY BLEU PIZZA WITH PEARS AND BACON

Prep Time 10 minutes
Cook Time 20 minutes
Bacon cook time 20 minutes
Course Appetizer, Main Course
Cuisine American, French

Ingredients
  

  • 6-8 slices bacon or maple bacon
  • 1 ripe pear unpeeled and sliced thinly
  • 1/2 cup fig jam
  • 3 oz. bleu cheese
  • 1 head garlic roasted
  • 1 T olive oil
  • pizza dough fresh from deli or refrigerated canned dough

Instructions
 

  • Cook bacon in a skillet or on a parchment paper lined baking sheet [350 for 20-25 minutes] until crispy. Break into pieces.
  • Form dough into a rectangular crust and bake at 400 for 10 minutes or until set and starting to turn golden.
  • Remove from oven and drizzle with olive oil, using your fingers to spread it all over entire crust surface. Squeeze garlic head out onto dough and spread it around evenly with your fingers
  • Repeat with the fig jam, again using your fingers to break up the jam. Top with bacon pieces, then pear slices. Sprinkle with bleu cheese. Return to oven and bake at 400 for another 7-10 minutes until hot and crispy.

This would be divine with some arugula or fresh salad greens on top too~

  2. Sitting here reading this while having my first cup of coffee — wondering if this would be good good breakfast! LOL It looks divine, and I am definitely saving it. We just had pizza last night the way Ray likes it, loaded with Italian sausage. I prefer lighter styles like this. How nice to make something just for yourself! I am going to remember that, too.

    That’s my kind of pizza Jenna! Love the pairing of the fig, bacon & blue cheese, the pear slivers take it over the top! Our neighbors have a ginormous fig tree that I’m keeping my eye on.They let us battle the birds and help ourselves to it 🙂

  8. I am in I used to have a baguette party recipe with blue cheese fig preserves and bacon! I bet goat cheese would be fabulous too!
