Recipe Box, White Chocolate Chip Zucchini Cookies

Shhhhhh…don’t tell anybody these cookies are full of zucchini, because they will never guess
“Hey Gigi, why do the cookies have green speckles?” asked Super Boy
“Oh, that’s the secret super hero ingredient, green energy sugar!”
“Hey DAD!! Gigi made special cookies with green energy, can I have one? Pleeeeeeeezzzzze….”
These cookies are Super Hero easy to make too!
Mix grated zucchini with egg, butter, sugar and vanilla
Stir in flour, baking powder and salt
mix it up
Add white chocolate chips
Drop by spoonfuls onto a silpat or parchment paper lined baking sheet
This dough is runny and cookies will spread out
The result is a thin, moist cookie with just enough crispy around the edges to make it the perfect bite
These cookies are unbelievable!
Mine aren’t perfectly shaped because they ran together when they were baking
Trust me, you won’t care, you will be popping them in your mouth so fast!
Because they are so moist, they will stick together, so best stored in a tin with layers of waxed paper~ do as I say, not as I do 😂

White Chocolate Chip Zucchini Cookies
Ingredients
- 2 1/2 cups all purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1 tsp vanilla
- 1 egg
- 3/4 cup unsalted butter [1 1/2 sticks] melted
- 1 1/4 cups sugar
- 1 1/2 cups grated zucchini about 1 medium
- 1 cup white chocolate chips
Instructions
- Mix butter with egg, sugar, and vanilla.
- Add zucchini.
- Mix flour, baking powder and salt and add to zucchini mixture.
- Stir in chocolate chips.
- Drop by large spoonfuls onto a silpat lined baking sheet [or greased baking sheet].
- Bake at 350 for 12-15 minutes or until edges just begin to brown and bottoms are set Cool slightly before removing to rack.
