Recipe Box, White Chocolate Chip Zucchini Cookies

Shhhhhh…don’t tell anybody these cookies are full of zucchini, because they will never guess

These cookies are Super Hero easy to make too!

Mix grated zucchini with egg, butter, sugar and vanilla

Stir in flour, baking powder and salt

mix it up

Add white chocolate chips

Drop by spoonfuls onto a silpat or parchment paper lined baking sheet

This dough is runny and cookies will spread out

The result is a thin, moist cookie with just enough crispy around the edges to make it the perfect bite

Trust me, you won’t care, you will be popping them in your mouth so fast!

Because they are so moist, they will stick together, so best stored in a tin with layers of waxed paper~ do as I say, not as I do 😂

White Chocolate Chip Zucchini Cookies

No one would ever guess there was zucchini in these moist and delicious cookies, just pretend they have green sprinkles!
Prep Time 15 minutes
Cook Time 15 minutes
Course Dessert
Cuisine American
Servings 30 cookies

Ingredients
  

  • 2 1/2 cups all purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp vanilla
  • 1 egg
  • 3/4 cup unsalted butter [1 1/2 sticks] melted
  • 1 1/4 cups sugar
  • 1 1/2 cups grated zucchini about 1 medium
  • 1 cup white chocolate chips

Instructions
 

  • Mix butter with egg, sugar, and vanilla.
  • Add zucchini.
  • Mix flour, baking powder and salt and add to zucchini mixture.
  • Stir in chocolate chips.
  • Drop by large spoonfuls onto a silpat lined baking sheet [or greased baking sheet].
  • Bake at 350 for 12-15 minutes or until edges just begin to brown and bottoms are set Cool slightly before removing to rack.

Notes

Make these gluten free with gluten free flour or gluten free baking mix [eliminate the baking powder if using baking mix]
