Recipe Box, Savory Apple Pie Quesadilla

Did you know that next Saturday, the Saturday before Labor Day,  is International Bacon Day?

Yep!  Celebrate with this sweet and Savory Apple Pie Quesadilla with BACON.

I call it Apple Pie because it is full of apples and sharp cheddar cheese, the classic pairing for apple pie

Except I used Cranberry White Cheddar and also added more cranberries and BACON, just to kick it up a little 😉

You can serve the bacon on the side if you prefer

When I make quesadillas, I first fry the flour tortillas in a scant amount of olive oil, just until starting to brown

This will give them an extra layer of crispy flavor after baking

Saute the apples in a little butter and brown sugar until soft and caramelized

Confession time…I cheaped out and bought the store brand cranberry white cheddar which was 1/2 of the price of  a good brand…and guess what, it was only 1/2 as good …

Go for the good stuff!!

Start building your quesadilla with a layer of grated cheddar

then top with apple slices, cranberries and crumbled bacon and more cheese

Top with another tortilla

Bake at 400 on a baking sheet for about 10-15 minutes, until golden and cheese has melted

The bottom will get browner than the top so flip half way through cooking if you have time

Let it sit for a few minutes to set, and then slice into wedges

I added some extra dried cranberries to make up for my frugal mistake~never ever skimp on cheese, I don’t know what I was thinking…I have been having nightmares ever since…

Yes, good cheese is expensive, but a little goes a long way in “flavortown”

you will end up using twice as much of the cheap stuff to make up for lack of flavor, so in the end you won’t have saved any money,  rather,  just added more fat

But why would you want to do that?

Savory Apple Pie Quesadilla

Prep Time 15 minutes
Cook Time 15 minutes
Course Breakfast, Brunch, Main Course
Cuisine American

Ingredients
  

  • 2 flour tortillas
  • 2 slices bacon cooked
  • 1 Fuji apple unpeeled, cut into slices
  • 2 T brown sugar
  • 1 T butter
  • 4 oz sharp cheddar or white cheddar with cranberries, grated
  • 1/4 cup dried cranberries optional
  • olive oil

Instructions
 

  • Fry tortillas in a scant amount of olive oil until just starting to crisp and brown. Remove to paper towels.
  • Add butter to pan, then apple slices and brown sugar.
  • Cook and stir over medium heat about 5 minutes, until apples are soft and caramelized.
  • Put half of cheese on one tortilla and top with apples, cranberries and crumbled bacon.
  • Top with remaining cheese and tortilla.
  • Bake at 400 for 10-15 minutes until brown and melted. Let set 2-3 minutes before cutting.
  • Cut into quarters or wedges. Makes up to 8 wedges. Increase ingredients for more servings.
