Recipe Box, Hassleback Rolls, 3 Ways

You’ve heard of hassleback potatoes, you know, potatoes that are thinly sliced not quite all the way through and baked with lots of butter and sometimes cheese and other toppings

Well, why not hassleback rolls!

I like pretzel rolls, but they are heavy and dense so I decided to create some Hassleback rolls

Cut them in thin slices all the way to the bottom, stopping just short of cutting all the way through

I made 3 versions, Butter & Salt, Italian Pesto, and Chicken Salad

Butter & Salt has butter between the slices and is topped with a generous sprinkling of Sea Salt

The Italian Pesto is spread with pesto sauce and filled with ham, salami and Fontina cheese

Bake the rolls for 10-15 minutes at 350.  Bake the roll for the chicken salad plain and fill after baking

The Butter & Salt roll could be changed up with garlic seasoning, Parmesan, sesame seeds, Everything Seasoning, fresh herbs such as rosemary or chives~

The slices get a little toasty on the edges and the roll still remains soft down deep inside so you get the best of both worlds~

Hot out of the oven, the Italian Pesto just winks at you and says, you know you want a bite!

BUTTER & SALT HASSLEBACK ROLLS

Prep Time 2 minutes
Cook Time 10 minutes
Course Bread, Side Dish
Cuisine American
Servings 6

Ingredients
  

  • 6 pretzel rolls [or any hard roll]
  • 12 T butter
  • kosher salt

Instructions
 

  • Slice rolls into thin slices without slicing all the way through. Generously butter slices and sprinkle with salt. Bake at 350 for 10-15 minutes until hot and starting to brown. Makes 6

ITALIAN PESTO HASSLEBACK ROLLS

Prep Time 10 minutes
Cook Time 12 minutes
Course Main Course
Cuisine American, Italian
Servings 6

Ingredients
  

  • 6 pretzel rolls [or any hard roll]
  • 12 slices salami cut in half
  • 12 thin deli slices ham folded in half
  • 6 oz Fontina cheese cut into thin slices
  • 12 T pesto sauce [I use Buitoni pesto from the refrigerated pasta section]

Instructions
 

  • Slice rolls into 8 thin slices without cutting through the bottom of the roll. Spread 2 T of pesto on slices of each roll. Stuff each roll with ham, salami and cheese in alternate slices. Bake at 350 for 10-15 minutes until hot and melted. Makes 6 rolls.

CHICKEN SALAD HASSLEBACK ROLL

Prep Time 2 minutes
Cook Time 10 minutes
Course Brunch, Main Course
Cuisine American
Servings 6

Ingredients
  

  • 6 pretzel rolls
  • 3 cups fresh chicken salad
  • lettuce leaves for garnish

Instructions
 

  • Slice rolls into thin slices, cutting down but not all the way through, rolls. Bake at 350 for 10 minutes or until toasted. Spread chicken salad in between each slice and serve rolls on a bed of lettuce leaves. Makes 6

You can serve these rolls with a knife and fork, but you can also just pull slices off with your fingers and munch away~

I used Pretzel Rolls from Costco, but obviously you could adapt these recipes to any style hard roll.

    Oh your Italian pesto version is calling my name this morning Jenna! What a great way to serve up a little sandwich for a picnic or lunch! I wish I had a Costco nearby for LOTS of things, the closest one is an hour drive and well off my beaten path.

    I’m not familiar with the term hasselback, but I sure like the way those rolls look, especially the chicken salad. BTW, do you ever get it at Costco? It’s quite good and easily doctored up.
