Recipe Box, Tator Tot Bake with Crispy Onions

I had some frozen Tator Tots leftover from making Brown Sugar Bacon Bundles and decided they might be just the perfect side dish for BBQ pork

This is just a humble little throw together casserole and it isn’t likely to win any beauty contests

But!  It’s fast, easy and tasty!

It’s actually green bean casserole with Tater tots instead of green beans 🙂

Tater Tot Bake with Crispy Onion

This is like green bean casserole with potatoes instead of beans!
Prep Time 5 minutes
Cook Time 45 minutes
Course Side Dish
Cuisine American
Servings 4

Ingredients
  

  • 16 oz frozen Tator tots defrosted
  • 1 can condensed Cream of Mushroom Soup
  • 1/2 soup can milk
  • 1/4 cup Greek yogurt or sour cream
  • 2 oz crispy onions about 1/2 bag Fresh Gourmet Crispy Onions
  • pepper to taste

Instructions
 

  • Place thawed tots into a cooking oil sprayed baking dish.
  • Mix soup with milk and add yogurt or sour cream and season with pepper.
  • Pour over potatoes.
  • Bake at 350 for 40 minutes.
  • Top with crispy onions and return to oven for 5 more minutes to brown.

BBQ Pork Butt

So easy, and so versatile!
Prep Time 5 minutes
Course Cook out, Main Course
Cuisine American, Southern

Ingredients
  

  • 1 pork butt 200 degrees, until serving
  • BBQ seasoning rub
  • BBQ sauce

Instructions
 

  • Coat a pork butt with a BBQ seasoning rub and cook it low and slow on an outdoor grill until done. Time will depend on size of meat and cooking temperature, use a meat thermometer to check
  • Let the meat rest for 30 minutes loosely covered with foil
  • “Pull” or shred pork while it is still warm and place it in a baking pan or crock pot and blanket with your favorite BBQ sauce and cover.
  • Turn crock pot on low or cover pan with foil and place in a slow oven

    Pulled pork is a favorite here…the tater tot casserole sounds yummy…to be truthful, I didn’t know they were still on the market. Those scalloped potatoes look delicious…I never have good luck making them, the sauce part always separates. I am going to try your honey’s recipe.

    • I think you’ll find this recipe for scalloped potatoes super easy Marigene! I much prefer real ingredients and the “real” scalloped potatoes really aren’t much harder to make than the convenience food Tater Tot casserole, hope you enjoy~
