Recipe Box, Kale Citrus Salad

This salad is a great pairing with heavy winter comfort foods, you can make the salad and a creamy orange dressing to top it, in no time at all~

You can use any salad greens you like, I used kale, spinach and romaine

Chop up the kale leaves into bite size pieces, removing any hard thick stems if necessary, and massage the kale leaves.  Seriously, just sort of roll them around on your cutting board massaging them gently, they love this!

The kale will repay you in spades by being softer and less bitter.  You can read more about massaging kale here

Squeeze 1/2 of a navel orange into a jar,  you need 1/4 cup

Cut up the rest of the orange into bite sized chunks, removing as much pith [the white stuff] as possible

The dressing gets creamy from the addition of sour cream or plain Greek yogurt

Sounds wonderful Jenna! I think we would enjoy it with just kale, those bags are bottomless you know 🙂

  2. Emily says:

This sounds delish Jenna. I had no idea a massage would make a difference in the taste of food, as we all know Kale can have a really bitter taste. We love salads here and what a good way to use all those oranges in the refrigerator!

This salad looks so delicious, Jenna! How interesting that you added sour cream to that dressing. Can’t wait until I can get some kale growing in the garden again! Stay warm!

It’s me again…love, love, love this salad, Jenna. Our grocer never has Kale, so I used a package of spring greens and Romaine. It was superb! The oranges are very sweet right now, too. Your recipe is a winner, and I’ll be making it again. 🙂
