Take-out Tuesday, Broccoli Candy

I have a little confession to make…as much as I love vegetables, I rarely eat  broccoli

I HATE  Broccoli is my very least favorite.  I know it’s full of nutrients, so I decided to roast it like I do my other favorite vegetables

I adapted this from several different recipes that I found

sliced garlic, lemon juice, salt, pepper, olive oil…

and Parmesan! Everything is better with Parmesan!

Bake at 400 for 30-40 minutes until everything is happy and delicious

Broccoli Candy

Even non broccoli eaters will love this!
Prep Time 10 minutes
Cook Time 30 minutes
Course Side Dish
Cuisine American
Servings 4

Ingredients
  

  • 1-2 large heads of broccoli cut into florets
  • 2-3 garlic cloves sliced
  • 1 lemon juice and zest
  • 2-3 oz. shaved or shredded Parmesan divided
  • salt & pepper
  • olive oil

Instructions
 

  • Put broccoli florets on a cooking oil sprayed foil lined baking sheet.
  • Squeeze lemon and drizzle juice over broccoli. Season with salt, lemon zest, and pepper and drizzle with olive oil.
  • Using your hands, toss florets around to distribute the oil, lemon and seasoning. Spread back out into an even layer and sprinkle with garlic slices and 1/2 of Parmesan cheese
  • Bake at 400 about 30 minutes, or until done to your liking. Remove from oven and add remaining cheese. Return to oven 1-2 minutes to melt cheese. Makes 3-4 servings

Now, obviously this isn’t really candy, but you will find yourself popping it your mouth like M&Ms!

The cheese forms delightful crispy crusty bites, scoop it carefully off the foil to enjoy every morsel

    Hi Jenna, Broccoli is one of my least favorites veggies too, I don’t care for the smell when it’s cooking. I love almost any other veggie roasted in the oven though 🙂
