When it comes to choosing a recipe from another blogger for Secret Recipe Club, I like to pick something I’ve never made before… Granola!

My assigned blog this month was Debbi Does Dinner…healthy and low calorie, and her recipe index is huge!

Debbi is also in charge of my SRC group, which is a lot of work, so thank you so much Debbi!  She has been blogging for a long time, and I think she’s made just about everything! She tries to keep it on the healthy side too, and likes to keep her dishes at 500 calories or less

Her Peanut Butter Granola intrigued me because not only have I never made granola,  I’m a peanut butter addict  😳  I love granola, but it can be full of weird sounding stuff and sneaky full of calories, so I have been looking for a good homemade one to try

I changed her recipe a little bit, to have the end result tastes kinda like a peanut butter and jelly sandwich  😋

This is so easy to make, I can’t believe I’ve never tried it before

Mix the dry ingredients in one bowl, and the wet in another.  Microwave the wet bowl for 1 minute to melt the peanut butter

Stir peanut butter mixture into the dry oats, brown sugar and nuts

Blend thoroughly

Spread out in an even layer on a baking sheet

Bake for 15 minutes and stir, and return to oven for 15 more minutes or until golden and toasted*

Immediately stir in dried berries and then let granola cool completely on the pan

*NOTE:  My oven cooks hot and I burned the first batch of this cooking at 325, so I made another batch and reduced heat to 275.  Watch the granola carefully at the end so it doesn’t overcook and remove it from oven when golden and the proper dryness.  I left mine a little soft because I prefer it not to be too crunchy

PEANUT BUTTER & JELLY GRANOLA

Prep Time 5 minutes
Cook Time 30 minutes
Course Breakfast, Snack
Cuisine American
Servings 8

Ingredients
  

  • 1 cup rolled oats
  • 1/2 cup chopped dry roasted peanuts
  • 1/4 cup peanut butter
  • 1 Tablespoon peanut oil
  • 2 T honey
  • 2 T brown sugar
  • 1/2 tsp vanilla extract
  • 1 cup mixed dried berries

Instructions
 

  • Combine oats, peanuts, and brown sugar in a large bowl.
  • Combine oil, honey, vanilla, and peanut butter in another bowl and microwave 1 minute on high to melt.
  • Stir and combine with dry ingredients, blending well. Spread out on a baking sheet.
  • Bake at 275 for 15 minutes, stir and return to oven for 10-15 more minutes until just golden. Be careful not to burn it.
  • Stir in dried berries immediately after removing from oven.
  • Let cool completely on pan, then store in an airtight container.

Notes

Use for topping cereal, oatmeal or yogurt or ice cream. Makes 8 servings, 1/4 cup per seriving, approx 250 calories each, or 2 Tablespoons=125 calories

You can make this with Almond butter too

I substituted marcona almonds for the peanuts, coconut and chocolate for the dried berries, Coconut Syrup for the honey,  and eliminated the brown sugar because there was enough sweetness.  The end result is sort of like the famous Almond Joy candy bar~ but better!

Add the coconut after the first 15 minutes so it doesn’t get to crisp or burn

Sprinkle with chocolate chips after baking and set in the refrigerator to cool before putting it in a jar

ALMOND JOY GRANOLA

Prep Time 5 minutes
Cook Time 30 minutes
Course Breakfast, Brunch, Snack
Cuisine American
Servings 8

Ingredients
  

  • 1 cup rolled oats
  • 1/2 cup Almond butter [ I like Justin’s Maple Almond Butter]
  • 1/3 cup marcona almonds chopped
  • 1 Tablespoon peanut oil
  • 2 Tablespoons Coconut Syrup
  • 2 Tablespoons brown sugar
  • 1/2 tsp almond emulsion* or extract
  • 1/3 cup semi sweet chocolate chips
  • 1/4 cup dried sweetened coconut

Instructions
 

  • Put almond butter in a mixing bowl or 1 quart measuring cup and add oil, coconut syrup, and almond emulsion or extract. Microwave 1 minute on high to melt. Stir in oats and almonds. Stir well and spread into an even layer on baking sheet.
  • Bake at 275 for 15 minutes, sprinkle with coconut and return to oven for 15 more minutes. Sprinkle evenly with chocolate chips and set aside to cool.
  • 8 servings, 1/4 cup granola per serving, approx. 250 calories each or 2 Tablespoons=125 calories

Notes

*almond emulsion is a little smoother in taste than almond extract
Maple syrup can be substituted for Coconut Syrup
