Take-out Tuesday, Strawberry Muffins

Here’s the great thing about these muffins, they are made with very little sugar.  They also have cream cheese in the batter for a little protein

I made these for the kiddos when we were having a little afternoon birthday party last week, and I didn’t want to load them up with sugar right before dinner

I know they look like they’re full of blueberries in these pictures, but the strawberries changed color after baking 😱

Fresh berries, some carbs to fill you up and you’ve got a tasty treat to get you through the am or pm

All you need is fresh strawberries, the usual suspects for baking, and the 2 bowl mixing method

one bowl for wet, one for dry

Strawberry Muffins

Prep Time 10 minutes
Cook Time 20 minutes
Course Bread, Breakfast, Brunch
Cuisine American

Equipment

  • muffin tin

Ingredients
  

  • 4 oz cream cheese softened
  • 1 T half and half cream
  • 1 tsp vanilla extract
  • 1 tsp almond extract
  • 2 eggs
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • dash kosher salt
  • 1/2 cup milk or cream
  • 4 T unsalted butter melted
  • 2 cups all purpose flour
  • 1 1/2 cups chopped strawberries
  • 1/2 cup sugar divided

Instructions
 

  • Using 2 mixing bowls, place the flour, salt, baking powder, 1/4 cup sugar and baking soda in one bowl and the cream cheese and extracts, and 1 T milk in the other.
  • Stir the dry ingredients together and beat the cream cheese with the extracts until smooth.
  • Add the 1/2 cup milk or cream, butter and eggs to cream cheese and beat to combine.
  • Slowly add dry ingredients to the wet, and combine thoroughly into a thick batter.
  • Spoon into cupcake paper lined muffin pan, about 2/3 full. Top with a generous sprinkle of sugar.
  • Bake at 350 for 20 minutes, just until set and beginning to turn golden. Do not overbake or muffins will be dry. Makes 12

    • Thanks Jerusha, my photos don’t do them justice, I forgot to take a pic right after baking and didn’t get to photograph them finished for several days, and they still tasted great, just didn’t look as pretty!
