Recipe Box, Cauliflower Fritters

You can also use it for a pizza crust!

Cut up the cauliflower and roast it until it’s almost done

See, it’s just starting to get dark around the edges.  It’s cooked but not mushy

Transfer cauliflower to a blender or food processor and pulse to chop

Transfer it to a mixing bowl with a beaten egg

Add cheese.  Mixture will just hold together

form into patties and place on a silpat lined baking sheet

Place in a 400 degree oven and bake until golden and darkening around the edges

Garnish with a little green onion, and sour cream if you like,  and serve as a side dish with steak, BBQ, or Fish!

Cauliflower Fritters

Prep Time 10 minutes
Cook Time 30 minutes
Course Appetizer, Side Dish
Cuisine American
Servings 8 fritters

Ingredients
  

  • 1 head cauliflower cut into small flowerettes
  • 1 egg
  • 1-2 oz grated Parmesan
  • 1-2 oz grated Manchego cheese*
  • olive oil salt & pepper
  • chopped green onions for garnish
  • sour cream optional

Instructions
 

  • Toss cauliflower with olive oil and salt and pepper on a cooking oil sprayed foil lined baking pan.
  • Roast at 400 for 20 minutes or until just golden, soft but not mushy.
  • Place cauliflower in a food processor or blender and pulse until finely chopped. Beat egg in a mixing bowl.
  • Add chopped cauliflower and 1 oz of each cheese. Stir with a fork to form dough, adding more cheese if possible while still leaving enough moisture so mixture will hold together.
  • Form into palm sized patties. Mixture might seem a little loose, but it will hold together on the pan. Place patties on a sil pat lined baking sheet.
  • Bake at 400 for 10 more minutes or until golden and starting to darken at the edges
  • Serve with green onions and sour cream, or top with pizza toppings and return to oven to heat through.

Notes

*be sure to use a flavorful cheese like Manchego, Smoked Gouda or Gruyere and a good Parmesan because that is where your flavor comes from

    I was just thinking the other day that we’ve gotten into a “sides rut”. We have a salad, baked potato, slaw or green beans with just about every meal. You’ve inspired me to get out of our rut and into the kitchen with you!
