Party Panache, Fried Onion Dip with Kale & Swiss Chard

Everybody likes chips and dip, right?

Sneak in a little kale and Swiss chard for some nutrition, and top it off with some fried onions for texture and flavor~

I was using up some of my garden bounty

Kale and Swiss chard are just like fresh spinach, you think you have way too much, but a mountain of greens quickly disappears as it cooks down

Give the greens a healthy dose of chopped garlic as they’re cooking

Season liberally with salt and pepper

Once the greens are cooked, caramelize an onion low and slow

Mix in cream cheese and sour cream

I kept things super casual by putting the chips on a metal tray with the bowl of dip

Fried Onion Dip with Kale & Swiss Chard

Prep Time 25 minutes
Cook Time 30 minutes
Course Appetizer
Cuisine American
Servings 8

Ingredients
  

  • 4 cups kale washed and dried
  • 2 cups swiss chard washed and dried
  • 1 large vidalia onion
  • 4-6 cloves of garlic chopped
  • olive oil
  • salt and pepper
  • 1/2 cup sour cream
  • 4 oz cream cheese
  • french fried onions

Instructions
 

  • Trim greens of stems and cut into ribbons.
  • Saute greens in olive oil and season with salt and pepper.
  • As greens cook down add the garlic and saute along with greens 1-2 minutes until done.
  • Remove greens to bowl.
  • Add onion to skillet and reduce heat. Cook low and slow, about 20 minutes until onion is cooked and caramelized. Add onions to greens and mix together.
  • Mix greens and onions with sour cream and cream cheese. Put in a small baking dish and bake at 350 for 20-30 minutes until hot. Transfer to a pretty serving bowl and top with onions. Serve with sturdy chips

quantities are approximate, adjust to your tastes

I used Cape Cod Waffle Cut Chips, they hold up well in a humid climate and are sturdy enough to support a heavy dip.  I also recommend Fresh Gourmet Crispy Onions, they taste great right out of the bag, you can bake them or not.
