Recipe Box, Bleu Cheese Burger Quesadillas

This recipe is for serious bleu cheese fans
BUT WAIT!
Don’t leave just yet! Keep in mind you can always substitute any cheese you like for this burger style quesadilla, 🍔 A great way to enjoy a “burger” any time~ rain or shine, too hot, too cold for grilling, you can still enjoy a delicious cheesy “burger”
Is it Blue or Bleu? I prefer the French spelling, bleu, just because I’m a little high maintenance 💅 but any way you spell it, bleu cheese adds tangy creamy goodness to so many things…
You know how good bleu cheese is on steak, with bacon, on or in a burger…
Well this is the ultimate, swoonable way to get your bleu cheese fix
You don’t need a lot of ingredients either, besides hamburger meat, blue cheese and tortillas, and lettuce and tomato for standard burger dressing, all you need is a sweet onion, a dash of Worcestershire sauce and a sprinkle of garlic powder
Saute onion until transparent. Add the hamburger meat and cook until browned. Carefully drain off fat if necessary~this will depend on the type of meat you use, the leaner choices won’t render much fat, but a larger meat/fat ratio, such as ground chuck, renders more fat, are more tender and have more flavor…
Season the beef with Worcestershire sauce, salt, pepper and a dash of garlic powder
I like to brown my tortillas quickly in a skillet with a little olive oil before filling, but you can skip this step and just let them brown up in the oven once filled. Sprinkle tortillas with a generous layer of bleu cheese crumbles
Top with an even layer of cooked beef and top with more bleu cheese
Top with an additional tortillas
Bake at 400 degrees for about 15 minutes, until cheese has melted and everything looks happy and golden
NOTE: If you haven’t precooked your tortillas, brush or spray them with olive or canola oil before baking. Turn quesadillas half way through cooking and oil the other side and continue to bake until done
Cut tortillas into quarters
Serve with traditional burger toppings like crispy lettuce and sliced tomatoes

BLEU CHEESE BURGER QUESADILLAS
Ingredients
- 1 lb ground beef
- 6 oz. crumbled bleu cheese*
- 1 large sweet onion diced
- olive oil
- salt and pepper
- garlic powder
- 2 T Worcestershire sauce
- 8 flour tortillas**
- lettuce
- tomato slices
- salad dressing optional
Instructions
- Saute tortillas with a little olive oil over medium high heat until golden on both sides. Drain on paper towels.
- Add a little more olive oil to pan and cook onion until transparent. Add beef and continue to saute until brown, using spoon to crumble beef while cooking. Drain excess fat. Add Worcestershire sauce, a dash or two of garlic powder, and season with salt and pepper.
- Lay 4 tortillas on a baking sheet. Top with a layer of crumbled bleu cheese. Divide beef between tortillas and make an even layer. Top with remaining cheese. Top with remaining 4 tortillas. Bake at 400 degrees for 10-15 minutes, or until cheese has melted and quesadillas are golden. Carefully cut into 1/4s. Serve with lettuce and tomato on the side, drizzled with salad dressing if desired. Serves 4
Notes
We have been sizzling in near 100 degree temps, almost too hot to grill, so this indoor burger is great for enjoying when the weather’s not cooperating…

We’re sizzling here too Jenna, it’s actually too hot to boat and I’m ready to boycott turning on the oven until fall! We’re fans of blue cheese so we would love the quesadilla version of your burger! Have you tried quesadillas in the panini press or sandwich griddle? It’s makes the cheese melty and tortillas crispy and brown too 🙂
