Recipe Box, Roasted Stone Fruit and Berry Salad

When I ate the first bite of this salad I said “Pie!  It’s tastes just like pie!”

The warm fruit with the creamy gorgonzola was like a bite of a peach cobbler or strawberry pie…

This salad is no guilt heaven!

Slice a peach, a plum a few strawberries and add raspberries or blueberries

Place on an olive oil sprayed, foil lined baking sheet

Top with reduced fat Gorgonzola cheese crumbles

Place in a 400 degree oven for 10 minutes

The cheese melts and the fruit softens and renders a sweet juice

Place this luscious mixture on top of a bowl of mixed greens

Add a sprinkle of Praline Pecans and a piece or two of maple bacon if you like

That’s it!

The juices from the roasted fruit and the melted gorgonzola will coat the greens and your eyes will roll and you’ll want to smile, but you’ll be too busy chewing and eye rolling and OMG ing

Roasted Stone Fruit & Berry Salad

Prep Time 10 minutes
Cook Time 10 minutes
Course Main Course, Salad
Cuisine American
Servings 1

Ingredients
  

  • 1 peach peeled if desired
  • 1 plum
  • 4-5 strawberries
  • 6-8 raspberries and or blueberries
  • 1 oz reduced fat Gorgonzola cheese crumbles*
  • 1 slice maple bacon cooked and crumbled optional
  • 6-8 Praline Pecans or any nuts, optional
  • Salad greens such as romaine spinach, kale, arugula

Instructions
 

  • Place fruit on a silpat or olive oil sprayed foil lined baking sheet. Fruit pieces should be in an even layer but placed tightly together.
  • Sprinkle evenly with cheese. Bake at 400 degrees for 10 minutes.
  • Top salad greens with fruit and sprinkle with bacon and nuts if desired. Makes 1 large salad

Notes

*substitute goat cheese, Brie or fontina if desired

If you feel like you need a little more dressing than the fruit provides, mix up a batch of Orange Marmalade Vinaigrette

  9. Jenna, this salad sounds divine! Can’t wait to try it. I spent a few days this week at the beach house and visited Oh So Coastal — oh, my, such lovely things! And guess what? They opened a second store on Hwy 59 which is just a few minutes from my house. Had to exercise restraint to only buy a few simple decor pieces — some driftwood candle holders. Lots to think and dream about in their stores!

    • Uh oh, now I’m going to have to go check that one out! They also have a store on Canal Road that’s called Coastal Cottage, it’s a little smaller, but full of wonderful stuff! Thanks Joanne! >

      • We visited both Oh So Coastal stores (the one in Orange Beach and Foley) and while they carry the same style of furniture and decor, each store carried different stock. So many goodies and choices!
