Take-out Tuesday, Cheesy BBQ Pork & Corn Nachos

We cook a pork butt almost every week……. the males in my family could eat BBQ every day

Pork Butt is a favorite because it’s so easy to throw on the grill or in the Crock Pot and let it cook low and slow all day.   You can also cook it ahead of time, pull it and then keep it warm in the slow cooker like this BBQ Pulled Pork below

We always cook a big one so there are plenty of  leftovers for a sandwich, just pile it on a toasty bun

You don’t have to use the standard tortilla chip, try something unexpected and different

Next time I’m going to use Microwave Potato Chips, they are easy peasy quick to make and would be divine with a BBQ pork topping

Add some green onions or peppers and diced or grated cheese like Cheddar or Smoked Gouda

Include some jalapenos if you want more heat and some diced tomatoes for color

Pork BBQ Nachos

Prep Time 10 minutes
Cook Time 15 minutes
Course Appetizer
Cuisine American

Ingredients
  

  • pulled pork
  • BBQ sauce
  • chips of choice
  • cooked corn
  • green onion diced
  • cheese grated or diced
  • jalapenos sliced
  • tomatoes diced

Instructions
 

  • Line a shallow baking pan with foil. Add a layer of chips. Top chips with a layer of pork and drizzle pork with BBQ sauce. Add a layer of any other ingredients you like. Repeat layers. Or you can make one large single layer.
  • Bake at 350 degrees or place on covered grill over medium heat. Cook until heated through and cheese has melted. Adjust quantities according to the number of people and whether this is a main dish or appetizer.

    I think it would be a blast to serve a huge platter of nachos one Sunday dinner, been kicking it around for a while now:@) BBQ pig would be a great addition!

    Jenna, We do this with our leftover pulled pork and make pigs of ourselves! I’ve never added fresh corn to ours, I’m looking forward to trying that. 🙂
