Take-out Tuesday, Salami Carbonara

Carbonara…it just might be the ultimate comfort food….😋

If you’ve never made Carbonara, it’s a great thing to have in your repertoire

It’s the dish that chefs make most often for themselves after a long day in the kitchen

It’s heavenly satisfying, a cinch to throw together, and a hit with all appetites

If you have pasta, eggs, Parmesan cheese, garlic, salami, ham, prosciutto or bacon, you’re in business

Saute the salami and garlic {if using bacon, cook it until done then add the garlic for the last minute so it won’t burn}

Combine the eggs and Parmesan cheese

Cook the pasta and add a little to the egg-cheese mixture to temper the eggs {slowly warm without causing them to scramble}

Then combine everything in the skillet with the salami and garlic.  Stir, adding a little pasta water to form a silky sauce.

Season with salt and pepper

SALAMI CARBONARA

Prep Time 10 minutes
Cook Time 15 minutes
Course Main Course
Cuisine American, Italian
Servings 4

Ingredients
  

  • 2 eggs
  • 3/4 cup grated Parmesan
  • 4 ounces salami
  • Olive oil
  • 3 crushed garlic cloves
  • 1/2 pound spaghetti
  • Salt and pepper
  • Chopped parsley

Instructions
 

  • Whisk together eggs and Parmesan in a large bowl. Cut salami into 1/2-inch strips.
  • Heat a skillet over medium-high, then coat with olive oil.
  • Cook salami and garlic until salami is crisp.
  • Cook spaghetti; before draining, reserve 1 cup pasta water.
  • Add a little hot pasta to egg mixture, to temper the eggs. Then pour the egg mixture with the rest of the pasta into the skillet with the salami and garlic.
  • Toss, adding enough pasta water to coat pasta in a creamy sauce. Season with salt and pepper, if needed. Serve topped with a sprinkle of parsley and an extra sprinkle of cheese.

    Question – notice that the picture shows DRY SALAMI. Can deli sliced HARD SALAMI be used also? Would you use 4 oz. bacon to sub. for 4 oz salami? Or would you use more oz. for bacon?
