Recipe Box, Cauliflower “Steaks” with Beer Cheese Sauce

I satisfied my recent beer and cheese craving with this recipe for cauliflower inspired by Joy the Baker

This recipe is so easy to prepare you won’t need a special occasion

I cut the cauliflower into thick slices, or “steaks”

Some small pieces will crumble off, but just toss them on the pan too

Make sure you spray your foil lined pan with cooking oil spray before adding the cauliflower

Drizzle the cauliflower liberally with olive oil and sprinkle with smoked paprika, salt and pepper

Roast at 425 for 20 minutes, turn cauliflower over and continue to bake for another 20 minutes or until cauliflower is soft and starting to char on the edges

About 15 minutes before cauliflower is done, make the cheese sauce

Stir flour into melted butter to form the roux, then add the milk, beer and mustard.  Cook and stir until thickened

Add cheese and stir until smooth

Serve in individual shallow bowls to keep the sauce contained

Cauliflower Steaks with Beer Cheese Sauce

Prep Time 20 minutes
Cook Time 40 minutes
Course Side Dish

Ingredients
  

Cauliflower

  • 1 large head cauliflower
  • olive oil
  • smoked paprika
  • salt & pepper

Beer Cheese Sauce

  • 2 T butter
  • 2 T flour
  • 1/2 cup whole milk
  • 3/4 cup beer
  • 2 tsp Worcestershire sauce
  • 2 tsp spicy brown mustard
  • salt & pepper
  • 2 cups grated sharp cheddar cheese

Instructions
 

Beer Cheese Sauce

  • Heat butter in a small sauce pan over medium high heat.  Add flour.  Cook and stir 1-2 minutes to form a roux.
  • Slowly stream in the milk and mix until thickened, about 2 minutes.
  • Add beer and Worcestershire, cook and stir until thickened, about 5 more minutes.
  • Add mustard and season with salt and pepper.
  • Remove from heat and stir in cheese until melted and smooth.  Makes about 1 1/2 cups sauce.  Serve over vegetables or as a dipping sauce.

Cauliflower

  • Remove leaves and stem end from cauliflower leaving it whole.
  • Slice into 1 1/2 inch wide “steaks”
  • Line a baking sheet with foil and spray with cooking oil spray.
  • Lay steaks on foil and drizzle liberally with olive oil.  Sprinkle with paprika and season with salt and pepper.
  • Roast at 425 for 20 minutes.  Turn steaks over and continue to roast for another 20 minutes or until soft and starting to char.
  • Serve cauliflower in individual shallow bowls with Beer Cheese Sauce

    I would have a hard time selling this to the hubby but he’d like the cheese sauce on something else. The tacquitos would definitely work.

    Looks and sounds wonderful Jenna! I always like the flavor roasting adds to veggies and the cheesy-beer sauce is no doubt yummy too…pass me the bag of pretzels 🙂
