Recipe Box, Balsamic Sweet Pepper Broccoli

Here’s a colorful recipe to add to your healthy collection~

The other day my son fixed roasted broccoli with sweet peppers

I thought this was an unusual combo, but hey, you never know~

This is the secret ingredient that brings everything together

balsamic vinegar

Put the broccoli on a parchment paper lined baking sheet, drizzle with olive oil, salt and pepper and balsamic vinegar.  Roast at 400 for 20-25 minutes until vegetables are soft and broccoli is starting to char on the edges

A rainbow of flavor, and very little fat and calories

Balsamic Sweet Pepper Broccoli

Prep Time 5 minutes
Cook Time 20 minutes
Course Side Dish
Cuisine American

Ingredients
  

  • fresh broccoli florets
  • mini sweet pepper rings [or colored sweet pepper strips]
  • olive oil
  • good balsamic vinegar
  • salt and pepper to taste

Instructions
 

  • Line baking sheet with parchment paper.
  • Spread broccoli florets evenly on paper and top with a layer of peppers. Drizzle olive oil over all and season. Toss to coat.
  • Drizzle with balsamic vinegar.
  • Roast at 400 degrees for 20-25 minutes or until vegetables are soft and cooked through. Serve immediately.

    Jenna, I’ll have to look for those pepper rings, I’ve never seen them. We love our veggies roasted in the oven and the balsamic is flavor booster 🙂

  2. Love broccoli and love peppers….so have to try this recipe soon…and need to look for the packaged pepper rings…have not seen them at my store….I roast broccoli with flavored olive oils, but now need to try the balsamic!!…Have a great day!

    Hi Jenna, Love this idea. We have been grilling peppers and onions and sometimes squash on the grill all sumer. I will have to try this with the broccoli and balsamic vinegar. I know we will love it, thanks for this one.

    He came up with a delicious, pretty, and healthy, and easy side dish. I LOVE balsamic vinegar, so this will be on my menu one day soon, maybe this weekend.
