Take-out Tuesday, Blueberry Bacon Biscuit Bake

Here is an “easier than pie” breakfast casserole that has it all~

Blueberries, eggs, bacon, biscuits and cheese…something for everyone!

Once the bacon is cooked you can easily prep this in 5 minutes

Cut the biscuits into 1/8s

Whisk the eggs with milk and season

Toss in the biscuit pieces

Everybody in the pool!

Stir gently to combine

Pour into a sprayed or greased casserole dish, large enough to spread the biscuit mixture out in one layer

You can prepare this the day before baking and refrigerate

Bake 20-30 minutes until biscuits are cooked and casserole is golden and bubbling

It’s sort of like blueberry french toast meets bacon, egg, and cheese biscuits!

Blueberry Bacon Biscuit Bake

Prep Time 5 minutes
Cook Time 25 minutes
Course Bread, Breakfast, Brunch
Cuisine American
Servings 6

Ingredients
  

  • 1 can Pillsbury Grands Biscuits
  • 8 slices bacon cooked and cut into 1 inch pieces
  • 2-4 oz grated cheddar
  • 1 cup blueberries
  • 6 eggs
  • 1/3 cup milk
  • salt and pepper

Instructions
 

  • Cut biscuits into 1/8s.
  • Beat eggs with milk in a large bowl and season well with salt and pepper.
  • Add biscuits and toss to coat. Add bacon, cheese and blueberries. Toss gently to combine.
  • Pour into a greased or sprayed shallow casserole dish.
  • Cover and refrigerate up to 24 hours before baking if desired. Bake at 350 for 20-30 minutes, until biscuits are cooked through and dish has set in the middle. Cut into squares to serve.

Lots of possibilities here: substitute sausage or ham for bacon, try different cheeses, omit blueberries and add green onions, spinach or peppers, or add green chilies for zip~

It cuts cleanly so you could even cut it into small bite size squares and place them in cupcake wrappers on a platter for a buffet or brunch

    What an interesting combination with the blueberries Jenna, I bet a little maple syrup for some sweet with the savory would be good too! Love the convenience with the biscuits and everything is better with bacon. Love your youngest boater in her cute pink hat 🙂
