Party Panache, Ice Box Cookie Cake

We spent a lovely fall weekend on the coast celebrating a birthday

I made some mini cupcakes in lieu of a birthday cake, perfect for little hands and non-guilty bites

They were terrible! No flavor and the weirdest consistency~ let’s just say I tossed the whole batch and went to Plan B

Plan B was creating a dessert on the fly with what I could find in the pantry and fridge

I did have a pint of heavy cream, so decided to combine that with HH’s private stash of Milanos to make a layered dessert with cookies, caramel and whipped cream

Whip cream with a little powdered sugar and almond extract for flavor and then layer away

Refrigerate for several hours or overnight to allow cookies to soften…plenty of time to make a birthday vignette!

I love to make signs with chalk in pens, and I designed this one using Picmonkey.  I used the Theme Celebrate for the banner, party hat and balloons.  I got the gifts from the Santaland Theme and added the text using “coffee break” for happy birthday and Sketch Book for the large “T,” which is my daughter’s nickname

Of course you can do some sketches by hand, but I like to use Picmonkey because you can change colors and move things around with just a few clicks

5 Minute Ice Box Cookie Cake

Prep Time 10 minutes
Cook Time 4 hours
Course Dessert
Cuisine American
Servings 7

Ingredients
  

  • 1 pint heavy whipping cream
  • 2 tsp almond extract
  • 1/4 cup powdered sugar
  • 20 chocolate filled shortbread cookies like Pepperidge Farm Milanos
  • caramel sauce

Instructions
 

  • Whip cream with sugar and almond extract until stiff peaks form.
  • Use a 8″ round or square deep dish.
  • Put a layer of 8-9 cookies in the bottom. Spread with half of the whipped cream.
  • Top with a drizzle of caramel and repeat layers, reserving one cookie for crumb topping.
  • Refrigerate for at least 4 hours to soften cookies before serving.
