Party Panache, Nutty Spinach Stuffing Bites

This is a fun and different little app to serve during the holidays.  You can use leftover stuffing or mix up a quick batch with a stuffing mix

My friend Lynn over at Happier than a Pig in Mud inspired me to try this.  I used her recipe and added nuts for added flavor and texture

I made our favorite stuffing as a side dish for dinner one night and saved the leftovers to make these appetizer bites

I like to add sauteed onion and celery to Pepperidge Farm Herb stuffing mix, and use chicken broth instead of water

Eggs, Parmesan, spinach and a dash of garlic

Mix it all together

Mound a spoonful of stuffing around your nut of choice, pecan

Pine nuts

Bake them on a parchment lined baking sheet

Bake about 15 minutes or until golden

Nutty Spinach Stuffing Bites

Prep Time 15 minutes
Cook Time 17 minutes
Course Appetizer
Cuisine American
Servings 48 balls

Ingredients
  

  • 1 box 10 oz., frozen chopped spinach thawed, drained and squeezed dry
  • 3 cups prepared stuffing*
  • 4 eggs beaten
  • 6 oz grated Parmesan cheese
  • dash of garlic powder
  • pecans, cashews, pistachios, almonds, pine nuts, walnuts

Instructions
 

  • Combine stuffing with eggs, cheese and garlic.
  • Use any nut, or combination of nuts, you like.
  • Form 1 inch balls with stuffing mix enclosing several nuts in the center.
  • Roll to shape into balls in the palm of your hand and place on a parchment lined baking sheet.
  • Bake at 350 for 15-20 minutes, until set and starting to brown.
  • Serve warm. Makes about 48 bites

    I loved Lynn’s stuffing bites Jenna and the nut inside makes for a fun surprise! I could happily devour several with a glass of wine. I bet a cube of cheddar inside would be tasty too 🙂
