Recipe Box, Panko Potato Balls

Here’s a fun little bite you can make out of those leftover holiday potatoes

With about 2 servings left of mashed potatoes or a potato casserole, like Hash Brown Potato Gratin, or Slow Cooker Brown Butter Potatoes, you can whip up 20 little potato balls for a deliciously different appetizer

Use a spoon or small cookie dough scoop to form bite size balls.*  Dip balls in beaten egg and then cover with panko bread crumbs

*Add bacon, chives, cheese, anything you want to jazz up your leftover potatoes

Fry 1-2 minutes until golden, drain and salt

But the squeeze bottle exploded and the stuff went flying everywhere…

PANKO POTATO BALLS

Ingredients
  

  • 2 cups cooked mashed potatoes or potato casserole*
  • 2 eggs
  • 1 cup Panko breadcrumbs
  • oil for frying
  • salt
  • sour cream and onion dip optional

Instructions
 

  • Form potatoes into 1 inch balls. Dip in beaten egg, then cover with Panko breadcrumbs. Fry potato balls for 1-2 minutes, drain and salt. Serve warm with sour cream and onion dip if desired

Notes

*Add bacon, chives, cheese, anything you want to jazz up your leftover potatoes
