Party Panache, Skinny Super Bowl Spread with Loaded Apple Cookies

People are always saying, “Wow, I would be in trouble if I lived at your house with all that food you are always making!”  True, my family loves to cook and eat good food, but we balance out splurges with healthier cooking, and we eat a lot of fresh fruits and veggies…

I want to share these ideas with you about making your next spread, a little less guilty…

How about a Skinny Super Bowl Sunday  🏈

Even people that don’t like broccoli might change their minds when they taste this Broccoli Candy...

Covered with a little crispy Parm, and subtly flavored with garlic, pile it on a platter and watch it disappear!

It doesn’t have to be piping hot either, it can happily hang out at room temperature

Instead of a heavy cheese laden dip and fattening chips, how about a dip with healthier chopped vegetables as the base and only a touch of salad dressing.  The dippers are salami chips.  The fat is cooked out and leaves a tasty treat.  This recipe will be posting soon

Caesar Salad Dip with Salami Chips

Baby Ham & Zucchini Bites are made without flour!  Just eggs, ham, cheese and grated zucchini

Instead of calorie and fat laden hamburgers and chili dogs, try serving Peach Salsa Chicken Chalupas

The chicken cooks to perfection in a bath of peach salsa in a slow cooker.  Then it’s ready to pile on a tortilla and top with more salsa and chopped onion, lettuce, tomato or guacamole

Dessert can still feel sinful, but actually be healthy.  Slice a cored apple into thin “cookies.”  Spread with almond butter or peanut butter and sprinkle with sliced almonds, coconut, dark chocolate shavings or chips

Slice a sweet apple into thin slices, I got about 12 slices from 1 apple

Ice the slices with almond butter or apple butter and raid your pantry for toppings

I used dried cranberries, coconut, white chocolate chips, chopped Reese’s peanut butter cups, and sliced almonds.  Each “cookie” has very few calories, but enough sweet to make them taste like a splurge!

Loaded Apple Cookies

Prep Time 15 minutes
Course Appetizer, Dessert
Cuisine American
Servings 12

Ingredients
  

  • 1 sweet crisp apple
  • almond butter
  • peanut butter
  • white chocolate chips
  • chopped dark chocolate pieces or candy
  • dried cranberries or raisins
  • sliced almonds or chopped walnuts or pecans
  • coconut shreds

Instructions
 

  • Core apple and cut into thin slices, leaving peel on. Spread half of slices with almond butter and spread half with peanut butter. Sprinkle on toppings of your choice. Refrigerate if not serving immediately.
