Tuesdays at my house are usually Taco Tuesdays because my grandsons are here and they love tacos. They eat scrambled egg tacos for breakfast and chicken and beef tacos for lunch and dinner…

Often I have a little taco seasoned meat leftover, not enough for another meal but enough to do something with…
Empanadas make a tasty snack, but how about a chunky hot dip
Add some vegetables like corn, chopped yellow peppers, onion and refried beans to the leftover taco meat
Top it with a layer of grated cheese
Pop it in the oven until it’s hot and melty
and serve it up with mini pepper pieces and scoop style chips
Perfect for football noshing!
Wait… football is over… 😢
But! There is March Madness, The Masters, Talladega, the Kentucky Derby, Cinco de Mayo, and lots of just plain ole Friday and Saturday nights when you need a nice hot dip to satisfy your inner snack demon… 🐷

Taco Tuesday Dip
Ingredients
- 1 cup cooked ground beef or chicken seasoned for tacos
- 1 cup corn kernels
- 1 sweet onion chopped
- 1/2 sweet pepper chopped
- 1/2 small can refried beans
- 3 oz grated cheddar or pepper jack cheese
- olive oil
- salt and pepper
- mini peppers and/or scoop chips
Instructions
- Sauté onion, peppers and corn in a little olive oil until soft. Season with salt and pepper.
- Combine vegetables with meat or chicken and stir in beans.
- Place in a small greased baking dish and cover with cheese.
- Bake at 350 for 30 minutes or until heated through and cheese has melted. Serves 4-8

Jenna, who doesn’t love a taco and this dip sounds amazing! My family will love this! I had my first taco at the age of sixteen! A small Mexican restaurant opened downtown and I was smitten! Happy Tuesday!
