Recipe Box, Ode to the Potato & Secret Ingredient Twice Baked Potatoes

When you think about all things Irish  🍀  and St. Patrick’s Day,

one of the first foods that comes to mind is the good old  PO-TA-TO!

Such a humble vegetable, that has endless possibilities…

My daughter made these easy peasy twice baked potatoes.  She loves to cook too, but with a career, a soon to be 3 year old, and Baby Boy on the move, she has precious little time

We were so thrilled when she made these potatoes for us recently

I thought they were totally brilliant and worth sharing with you…

Her secret ingredient is creamy salad dressing

You might not always have sour cream or yogurt in your refrigerator, but if you have butter and a bottle of creamy salad dressing you’re all set!

She used bleu cheese dressing, but you can use ranch or creamy Italian

stuffed potatoes

Add some garlic powder, chopped green onion and grated cheese too if you like

Prepare them early in the day and then bake right before serving.  You can freeze them after baking too

SALAD DRESSING STUFFED POTATOES

Prep Time 10 minutes
Cook Time 45 minutes
Baked Potato time 1 hour
Course Side Dish
Cuisine American

Ingredients
  

  • 1/2 or 1 baking potato per person
  • Creamy Bleu Cheese Ranch or Italian Dressing
  • 1 T butter per potato
  • chopped chives optional
  • grated cheese optional

Instructions
 

  • Wash potatoes and prick with a fork. Bake at 425 for 1 hour or until soft throughout. Let cool a few minutes for easier handling. Cut potatoes in 1/2 or cut a small slice off tops.
  • Carefully Scoop out the potato from the skin, being careful not to damage the skin. Mash cooked potatoes with butter until melted, and add enough salad dressing to get a creamy consistency. Season potato mixture with salt and pepper, onions, and grated cheese if desired, and mix. Spoon potato mixture back into shells and bake at 350 for 30-45 minutes until heated through.

Notes

Potatoes can be prepared in advance and refrigerated until final baking.
Can be frozen

  5. What a little cutie (the kid, not the food)! I ‘ll bet he is into everything. Your daughter’s potatoes look heavenly. I remember doing something like that many years ago when I was first learning to cook. I probably stopped because it was a lot of trouble. This way sounds much easier!

    Potatoes have to be the most versatile and delicious of all vegetables…I couldn’t imagine giving up potatoes for any reason.
    Your daughter’s version of baked potatoes sounds delicious…Lite House Bleu Cheese is the best.

    Potatoes are definitely one of my favourite veggies and as you point out, so versatile. That said; thank you for idea of using salad dressing. I often microwave them first and know some would call that cheating but it does speed up the process and no one has ever noticed the difference … ☺. -Brenda-
